Fancy trying out my new creation? Delicious herbs rice and cucumber noodle salad with a Thai inspired dressing served with #pixelatedavocado.
I spent a large chunk of my childhood in Thailand and have fond memories of it and the food of course.
Ingredients for 2
1/2 ripe avocado
1 handful of mint , roughly chopped
1 handful of coriander, roughly chopped
1 cucumber spiralised
1 baby gem lettuce, sliced
3 small cloves of garlic, crushed or grated
1tbsp fresh ginger, grated
Juice of 1 lemon or 2 likes
2 tsp fish sauce
1 tsp maple syrup or similar
Sesame seeds to garnish
Simply soak the rice noodles in cold water whilst you prep up the other ingredients.
Add the ginger, garlic, maple syrup and lemon juice and mix briefly. Toss in all the other ingredients and top with sesame seeds. Add that glorious half an avo and serve up for delightful summer salad.
