I'm constantly trying to keep food exciting and interesting for my kids, and myself too. It's very easy to get stuck doing the same old things every week without changing it up. This morning my son watched me eat my chickpea pancake that I added lots of turmeric to. He exclaimed "yellow pancake!". I immediately thought to make different color pancakes using fruits and veggies. I quickly whipped up my 3 ingredient pancake recipe and added @pitayaplus frozen dragon fruit! The result was this gorgeous pink!
2 organic eggs
2 ripe bananas
1/2 packet frozen pitaya
About 1 cup oats
Blend in high speed blender until smooth add oats until pancake batter consistency is achieved. Enjoy!! PS. I added chocolate chips to some of them but they preferred them without the chocolate.
Feel free to try out adding Beets, turmeric, spirulina, or anything else to add a pop of color! I will be experimenting all week with color pancakes (and maybe waffles 🤔)! Stay tuned!
