With this heat wave going on, it’s definitely a pineapple salsa kind of night! Recipe courtesy of my aunt @lisa_nuggleblanket and it’s become a fast favorite!
•1 fresh pineapple, skinned and cored
•3-5 fresh jalapeños
•1 bunch cilantro, stemmed
•salt to taste
Either finely chop/dice each ingredient and combine, or rough chop and drop into a food processor or blender and pulse to desired consistency. I like it best as a pico de gallo (like the last pic➡️), but you can blend it on the lowest setting until it’s a super fine and juicy salsa.
**Really juicy pineapple might be best diced manually, or separately from the other ingredients... the juicier/riper the pineapple, the faster it will blend!
**For milder salsa, use a sweet onion and remove all seeds/ribs from jalapeños.
**For spicier salsa use red or white onion and leave some ribs and seeds in jalapeños... the more you leave, the spicier it will be, depending on the jalapeños.
**switch it up by adding tomatoes or mango and squeeze on some lime juice, or replace jalapeños with a green pepper.
