Just analysing the crumb & structure of yesterday's bake.

Man, that on-a-whim random-mix-of-the-last-of-my-flours forgot-a-fold-for-4hrs bread turned out really well!
.
The smell of this bread is so deep! Sweet, sour, yeasty, savoury, and something particular I can't describe in words that takes me back to visiting the neighbourhood bakery up the street for free slices with honey when I was a wee child. I feel like some part of my life has just come full-circle.
