Just quickly whipped up this delicious miso soup, which is one of my all time favourite dishes! It is so fast to make, and combines all of my favourite tastes and textures 🍜 And it was made that extra special by using a few bits from @waitroseandpartners new Cooks’ Ingredients range 👌🏻 To recreate this yummy and warming recipe:
1️⃣Soak half a packet of Waitrose Cooks’ Ingredients shiitake mushrooms in boiling water for 20 minutes.
2️⃣Meanwhile, thinly slice 1 clove of garlic (or if you’re feeling lazy, use Waitrose Cooks’ Ingredients super handy puréed garlic), chop 250g of mushrooms and cube a block of tofu.
3️⃣When the shiitake mushrooms are ready, add them to a pan (with the liquid) over medium to high heat along with the garlic and mushrooms. Simmer and reduce down.
4️⃣Put on some noodles to cook according to packet instructions.
5️⃣Add in 1 litre of vegetable stock, the tofu and 1 head of pak choi to the pan, and then bring to a boil.
6️⃣Remove from the heat, and add 1 tbsp of the Waitrose Cooks’ Ingredients white miso paste and stir through.
7️⃣Serve in a bowl on top of your noodles, and finish off with a sprinkling of sesame seeds, coriander and sliced spring onion. Enjoy!
