This morning's experiment. An attempt at pancakes (for myself) sans flour & sugar. I won't pretend they tasted like traditional pancakes, but for moi, who has dropped 15 lbs. and counting by cutting out carbs from bread/refined sugar, I decided to give this a shot. They look a bit dark, I think because of the ingredients. Would definitely add blueberries or strawberries as they add a natural sweetness. Not a vegan, but use this protein powder and also Vega (available @target) because it is soy free.
2 eggs (I use #peteandgerrys)
1 serving of your favorite protein powder
1 tsp baking soda
1 tsp vanilla extract
blueberries (added when cooking)
*macadamia nuts chopped (I will skip next time)
Mix all ingredients in bowl, then pour in small amounts onto buttered griddle or pan. NOTE: Next time I will also make smaller pancakes as these took a little too long to cook through. All in all, I felt like this was a nice substitute.
