not the most photogenic but idc it was real tasty 🤤♥️ roasted red pepper n tomato tuna pasta.
- 1 tbsp ghee
- 1 med onion - diced
- 2 cloves garlic - minced
- 1 tbsp tomato paste
- 1 red pepper - diced
- 1 whole red pepper
- 2 med carrots
- 4 medium tomatoes
- paprika, cayenne pepper, black pepper, pink salt.
- 1c water
- a handful of cherry tomatoes - halved
- 2 tins of tuna (i used @safecatch elite purest)
- a few handfuls of spinach
- pasta -
- parsley for garnish
sauce: roast carrots in the oven at 200c for about 30-40 mins - add the red pepper half way through
add a tbsp ghee to a pan and add the onion and cook til soft, stir through the garlic, diced red pepper and tomato paste and cook for another couple of minutes then take off heat.
in a blender:
add the medium tomatoes, red pepper, carrots seasonings to taste and water then blend until smooth. add to the onion pan and let simmer on low heat, until it’s thickened up (about 15 mins)
meanwhile, prepare pasta according to instructions.
stir in the tuna, cherry tomatoes and spinach to the sauce then add to the pasta in a large saucepan. finally grate some cheese and put the pan under the grill until it’s melty. garnish w parsley and enjoy!
