Smoked this prime brisket on Saturday. Brisket hit my @traegergrills Timberline at 180 for 3 hours. Then 225 until internal temp was 205. No wrap! Let it ride 14 hours until it was done! Put it in a pan and wrapped it in a beach towel for a hour and a half before slicing. Learning that each brisket is different. None cook the same way. Love the challenge of it.
