Hoy de cena preparé una arepa de plátano amarillo y linaza rellena de tomate, aguacate y sauerkraut (chucrut). O sea, no puedo explicar lo rico y sobretodo lo fácil que es de hacer. Solo necesitas hervir con un poco de agua el plátano, cuando esta listo lo majas y haces un puresito. Luego añades dos cucharadas de linaza en polvo, masajeas la masa hasta que todo esté uniforme, haces tus bolitas (como la arepa normal) y listo. Al sartén 🥘

Puedes usar el relleno de tu preferencia, pero por ser #lunessincarne decidí solo usar aguacate y tomate.

In a previous post I referenced my culinary style as one of “resourceful elegance,” ..... and here’s a perfect example of how being conscious of using every part .... of everything ..... can deliver the greatest delights in the kitchen. Yesterday’s crawfish have become today’s crawfish bisque .... and dairy free might I add 👌🏻. I simply followed a traditional protocol for lobster bisque with the exception of using the crawfish in place of lobster, @nutpods in place of cream, and @themapleguild maple vinegar in place of the traditional sherry vinegar (These crawfish were previously cooked in maple vinegar and so I wanted to reinforce that flavor coming through in the bisque. ) The result is this luscious soup which used all the Crawfish shells (and their nutrients) leaving absolutely NO WASTE ..... (or stinky trash can) behind. What’s more ..... it makes a fabulous sauce for pasta , and drizzled over everything from fish to veggies. So rather than look at resourcefulness from the point of deprivation ... widen both your culinary and nutritional horizon by endeavoring to keep with the law of nature .... and waste not ✊🏻🌿🌎

Kamut- part of the ancient grain family which has controversy of where it originated. Regardless it is a grain consumed by our ancestors and very underrated today. Kamut is a grain that is high in protein, fiber, magnesium, zinc, selenium and polyphenols. Kamut is a wheat grain and had a great nutrient profile. It can be used just like rice or pasta, but has more nutrients than conventional popular grains popular today. Try using an ancient grain like kamut, farro or quinoa instead or rice or pasta in your next side dish or main entree.

Wasted no time using my brand new @alaskapureseasalt lemon lime salt in AND on some fresh guac. Paired that with some veggies sticks, oven roasted asparagus and bok choy and a piece of @sizzlefishfit haddock. ✅👌🏻

- Back: chocolate cayenne muffins with @lakantosweetener cacao-infused maple syrup and pink Himalayan salt 🍫🍁
- Right: strawberry velvet muffins with freeze-dried strawberries, @workoutlife beetroot powder, and @vega_team vanilla greens protein 🍓
- Middle: lemon muffins with sugar free mango jam and flowers 🌸🍋
- Left: pumpkin spice muffins with Vega vanilla protein and cinnamon 🎃
All of these muffins were DELICIOUS! The chocolate cayenne and lemon flavors were my personal favorites, but I’m glad I decided to be creative and bake all kinds of muffins instead of one big cake for more variety! Don’t get me wrong- not ALL have a negative agenda but sadly, they have been untrained and thus have a huge lack of knowledge in this. We need them to advocate for US and not for a company, business or money/political gain. We need people who have our best interests in mind... NOW and long-term!
