The skin from this duck is evenly crisp, savoury and delicate- and the meat within is so tender and moist that it appears slick with jus. Sexy, sexy duck jus. The flavours were the best part of this dish. Duck from around here has a ducky depth that is unmatched in Asia, as far as I am concerned- at once moderately gamey but well-rounded on the palate and intensely long on the tongue. The layer of unrendered fat below the skin helps deliver this incredible flavour bomb, but will probably be a bit much by the end of my meal.
