A board the size of our table arrived full to the brim with slices of the most tender and tasty steak, roast potatoes, padron peppers, charred spring onion, a bone marrow dip and jus. πŸ–πŸ₯”πŸ₯’πŸ· This is Top Chef Masters winner @offalchris' rare Pin Bone cut; the most succulent of the sirloin steaks consisting of a piece of tenderloin, top loin AND hip bone making every piece of meat different in taste and texture. πŸ’ͺπŸ»πŸ˜‹ It was all delicious. I highly recommend this restaurant. I caved guys. I needed carbsssss. But if I’m gonna cheat, I’m gonna mix in as many veggies as I can. Here we have pesto tortellini with zucchini, shrimp, pancetta, and sun dried tomatoes. I like adding zucchini to my pasta, because it’s flavor doesn’t take over the pasta. Other add ins you can consider could be kale, or spinach. If you go with a leafy green though, I’d say hide it in your tomato sauce. The acidity of the tomato can hide any dominating flavors from a leafy green. One last tip, if you’re cooking with pancetta, or any other pork based meat, remember that pork is salty. Don’t over season your other ingredients, or else it’ll be as salty as my soul.

Mushroom mushroom soup -
Saute an onion and 3 stalks of celery in olive oil on medium heat until translucent.
In a separate pan saute a ton of chopped mushrooms until brown.
Add most of the browned mushrooms in with the onions along with 5 cloves of garlic, thyme, pepper, and a dash of Cayenne pepper.
Deglaze the pan with a cup of white wine and allow it to reduce for a moment before adding a large block of soft tofu, a medium potato, and broth.
Bring to a boil and then reduce heat to medium and allow to cook for 20 minutes.
Using a immersion blender pulse the soup until it is a smooth consistency.
Add the reserved remaining browned mushrooms into the smooth soup to provide a bit of texture and allow to simmer for another 15 - 20 minutes.
Salt to taste.
