@sophie_green1 @jeni_swin and anyone else who is interested. These are the ingredients I used. You could use whatever you wanted to really. If you can work it into your day! Personally I'd recommend more cheese if you can allow it 👌. So I kind of made this up as I went along so the method may seem a bit Great British Bake Off Technical Challenge-y...but here goes!
1) peel and dice sweet potato. Microwave in a small amount of water until soft. Drain and mash.
2) chop veggies, prep tuna and cheese and add to mash mix. Give it a good stir.
3) Make the patties. You could use an egg I suppose to help bind but I didn't. I didn't fancy this sticky stuff all over my hands when I was up and down the stairs trying to settle the kids. But feel free to just get your hands in there to form the shapes! I decided to evenly spoon the mixture into a silicone cupcake baking tray and press it down so it was a nice even shape. Half way through I decided to take them out of that and just do them on a baking tray with a few sprays of frylight to try and brown them off a bit. So not actually sure what to suggest is best! You may just need to experiment 😜. I did warn you!
4) again, a bit vague as I was in the middle of bedtime 'routine' and had no idea how long they would take! But I had mine on 180 degrees (fan assisted oven) for about maybe 20 minutes? But just keep an eye on them and vary accordingly.
