It's been busy days at work lately, which is why I haven't posted. Trying to come up with something #delicioso and cool! Open to suggestions. #SousVideSuggestion: Vacuum seal your seasoned meat and stick it in the freezer. So when you get home from a busy day at work you fire up the #Anova, drop in the #steaks, and relax in front of the TV for ~1.5 hours.

These #picanha and #ribeye steaks were in the #WaterBath at 132.5° for about 1.75 hours then #PanSeared. The cream of #broccoli is pretty simple; steamed broccoli, chicken stock, cheese, butter and salt/pepper. Be back soon with something new and (hopefully) delicious!

Funny story... Went to get a physical recently and the nurse told me that if I eat meat, to trim the fat and not eat chicken skin. I wanted to tell her to go F herself but settled for ‘Well we’ll have to agree to disagree on that one, I believe fats from well raised pastured animals are actually very nutritious if eaten in moderation’ ... the stunned nurse just responded ‘Well I’m just here to offer my suggestions’ aka “I’m only saying what we’re supposed to say off our list of 50 Things to Say During a Physical script” 🤣

Having lived on the East coast has spoiled me. My appetite and food pallet will always be on the prowl for the next flavorful dish. I’m so glad cooking comes easy for me. So even here in Colorado Springs, I can bring delicious cuisine to my table and share it with those whom I love.

Pan seared salmon, with pink key west wild caught shrimp, and roasted tri colored carrots with a small potato!

Regrann from @paleohacks - Pan-sear salmon in a creamy ghee sauce for a dish that’s crispy on the outside and oh-so tender on the inside.
Ingredients
• 2 salmon fillets (4 oz each)
• 2 T ghee, divided
• 3 large garlic cloves, minced
• 1 cup diced onions
• 1 cup full-fat coconut milk
• ¼ t ground turmeric
• 1 t salt
• 1 t tapioca starch
• 2 cups baby spinach leaves
• 1 T chopped parsley, for garnish
Instructions
1. In a large skillet over medium-high heat, melt ½ tablespoon of ghee. Add in the salmon and sear until cooked through (approximately five minutes each side). When finished, remove the fillets from the pan and set aside.
2. Melt the remaining ghee with the leftover juices in the skillet. Add the minced garlic and fry until fragrant (approximately one minute). Stir in the diced onions and sauté for five minutes, or until tender.
3. Reduce the heat to low and add the coconut milk, ground turmeric, and salt. Let the ingredients simmer for 10 minutes, making sure to stir every few minutes. Add the tapioca starch and continue mixing until it is fully dissolved.
4. Toss in the spinach leaves and let them wilt for one minute before removing skillet from heat.
5. Return the salmon fillets back to the skillet and spoon the sauce over.
6. Sprinkle with chopped parsley and serve warm!
