I'm having a crazy busy week (cooking, blogging, dealing with lots of tech stuff for my site, SEO audit, searching for a new home to buy, doctor's appointment and so on). But I'm glad I made these Ground Beef Zucchini Sweet Potato bowls yesterday to have a quick lunch during the week. Now even with no time to cook I can still eat healthy. I sure love my mini crockpot! It heats up my meals so they are convenient and hot. When food is cooked, it ensures that it is easy for the digestive system to assimilate your meal and nourish the correct parts of your body. This little friend of mine really helps me enjoy cooked meals with such convenience!

Excelente desayuno para grandes y chicos 😉, tortitas/panquecas de chocobanana:
1 banana gde
4 claras + 1 huevo
3/4 taza de harina de Almendras (puedes usar de avena si no sigues #paleodiet)
1cda generosa de cacao orgánico
1 cda de aceite de coco
1 cdta de vainilla
1 cdta de Canela en polvo
1 pizca de sal marina
Si te encanta el dulce, puedes usar miel cruda/sirope de arce/stevia no refinada a tu gusto. Para mi con el dulzor de la banana es suficiente👍🏻
Mezcla todo en la batidora/licuadora/procesador y hazlas a fuego lento en una sartén anti adherente. Y voilà! 💁🏻‍♀️

FOR THE MEATLOAF:
1 lb Ground beef
1 egg
Almond flour
Coconut aminos
Garlic powder
Salt and pepper
Unfortunately I don’t know the exact measurements. I usually just throw everything in until it looks right and work it together with my hands (gloved, of course, because raw meat is ewwww😞) until it looks/feels right. Place in a pie plate and form into a circle about 2 inches thick.
FOR THE TOPPING:
1/4 cup bbq sauce
1.5 Tbsp honey
1 Tbsp Dijon mustard
Splash of coconut aminos
Whisk together and pour over top of meatloaf.
Bake at 350F for 30 minutes, or until internal temp reaches 165F.

1.5 T almond flour
1/2 T coconut flour
1/2 tsp baking powder
Chopped spinach
1T water

Sprinkle of stevia

Keeping it real while desperately seeking motivation whilst on holiday. I have no discipline at all right now. I haven’t been this unfit or unhealthy for about 8 years. When I look back at my fitness a year ago, (swipe to the right) my one rep max was 80kg. So I was pretty much starving after my workout this morning and seriously did not feel like messing around so I went with sweet potato toast— you just can’t go wrong 🤷🏼‍♀️ plus @choosing_balance inspired me with her gorgeous post this morning 😍 I was actually really hesitant when I first tried sweet potato toast because the idea of it was super boring to me - just a mushy piece of a sweet potato with not much flavor 🙅‍♀️ but soon after I tired it I realized that it’s seriously 100% about the toppings 🙌👌 now it is honestly one of my favorite things- it’s so simple but has many possibilities and flavors 🤗 so if you’re hesitant to try sweet potato because it sounds kinda blah to you, I promise the toppings are key!!! ☺️

Sliced these guys up real thin and popped them in the oven on 420 for about 25 min, and then finished them up in the toaster so they’d crisp up a lil bit 🙌 topped the left w/ @siggisdairy plain yogurt, organic blueberries, and sliced almonds 🤤 the middle with avocado, salt and @nutiva chia seeds 💯 and the right with @thrivemkt organic chickpeas (roasted w/ some salt and paprika), cherry tomatoes, micro greens, and some @siggisdairy plain yogurt mixed w/ water, parsley, and @traderjoes everything but the bagel spice 😋🙌👌

Okay.......go to your kitchen........or wherever you keep your water in your house........and simply, FILL UP YOUR BOTTLE/GLASS/CUP/MUG/JUST POUR THE WATER INTO YOUR MOUTH! 🌊

Drinking more water is probably the easiest and most beneficial thing you could do for your health right now! I could use this post to talk about alllllll of the different types of high quality water that are better for you to drink (reverse osmosis, distilled, spring, burkey filtered) or what’s better to drink your water out of (the alarming notion of drinking out of plastic bottles) but honestly, when you work in the health field and you realize how deep a clients resistance to living a healthier life runs, it is pointless to chase “perfection” with such a healthy act as drinking more water! JUST START DRINKING!

Now, one thing I probably wouldn’t advise under most circumstances is drinking from the tap (but if this is your only option, than who am I to suggest not doing so), but what I am trying to say here is, however you need to do it, simply start increasing your water intake in order to feel much better than you do now! Whether that means drinking bottled water because you can easily place 8 bottles in a common area of your home to remind yourself to drink, or spending a lot of money on an expensive but very high quality filter to change the type of water that runs through your house pipes than SO BE IT!

Humans are more than 70% water, meaning our bodies NEED IT! Water is used in almost every process your body takes part in, especially in detoxification, cellular functioning (which keeps you alive), and hydrating the joints/skin!

Tuna salad lettuce cups... because I see cookies in the near future so might as well have a healthy lunch 🤷🏼‍♀️ this recipe is super easy and also delicious on a bagel, just sayin
Recipe:
Combine in a bowl
- 2 cans drained wild caught tuna
- 3 thinly diced celery sticks
-1/2 of a red onion, diced
- 1 diced jalepeño, or two or three
In a separate bowl mix together:
-1/2-3/4 cup avocado oil mayonnaise
-1 1/2 tablespoons dried dill
-1 tsp granulated garlic
- generous shakes of salt and pepper

Combine all ingredients together and serve up for lunch allll week 🤘🏼recipe adapted from @21daysugardetox

Chocolate Zucchini Cake 🍰

Ingredients: 📝
1/4 cup coconut flour (32g)
1/4 cup cocoa powder (25g)
1 1/2 banana (medium, darker the banana sweeter the cake)
1/4 tsp baking soda
1/2 tsp baking powder
1/4 cup shreded zucchini
3 large eggs
3 tbs coconut oil (melted)
3 tbs coconut milk (liquid of choice eg: unsweetend cashew milk)

Instuctions: •preheat the oven 350 degrees Fahrenheit
•line an 8x8-inch pan with parchment paper and set aside
•in a high speed blender combine all your ingredients until a thick batter remains
•pour the vatter in the greased pan
•bake for 25-30 mins or until a skewer comes out clean from the center

Optional:➕ Frosting:
1/4 bar 85% dark chocolate
1/2 tbs white chocholate chips
1 tbs coconut milk
Combine all the ingridients either stovetop or in the microwave heat until just melted. Pour over your cake.
