{THANKSGIVING COUNTDOWN RECIPE} LET'S TALK LEFTOVERS. Go buy some green plantains to make the most epic leftover sammie EVAHHHH. Grab my recipe below to make JIBARITOS (plantain sandwiches) and you can thank me later. Trust me.

INGREDIENTS
serves 2
1 green plantain
2 tsp melted coconut oil or olive oil
dash sea salt
🥪
DIRECTIONS
1. Pre-heat oven to 350f degrees and line a baking sheet with tin foil loosely (you’ll need to pick up the tin foil mid-way).
2. Cut the plantain in the middle in half and peel off the skin.
3. Cut each slice in half lengthwise so you have 4 pieces (like in my first picture up there).
4. Drizzle oil in the lined baking sheet and roll each plantain piece so it’s coated in the oil.
5. Lay each piece on the flat sides and sprinkle with sea salt over top.
6. Bake for 20 mins, keep the oven on and quickly take out your pan and lift that tin foil out and place on a cutting board or flat surface. Lay parchment paper or more tin foil on top of the hot plantains and with a heavy pan, give it some muscle and force and press each piece so they flatten. Flip each one over and press again until you’re happy with the size, shape and thickness. If it cracks a little, it’s okay you can mend it together fairly easily.
7. Return the tin foil with plantains back to the baking sheet and bake for another 10 minutes.
8. Then you’re done! Remove and use as sandwich bread or crostinis! I add greens, mayo, cranberry sauce and turkey.

WHO ELSE LOVES MASHED POTATOES 🙌 They were my favorite (and basically only) side dish growing up 🙃 (picky eater) ...These ones may or may not be mixed with roasted cauliflower 😏 I’m going to bring these to my family’s thanksgiving and see if anyone notices 😇 (Sibs, don’t tell mom and dad 🤫) Recipe on the blog link in profile @fitmittenkitchen

🌶WHITE CHICKEN CHILI 🌶 -2lbs of chicken, trimmed of fat
-1 onion diced
-1 bell pepper (any color) diced
-1 jalapeño seeded and diced
-6 cloves minced garlic
-24 oz low sodium chicken broth
-1 can great northern beans (drained)
-2 4 oz cans green chilies -1 can whole kernel corn (drained)
-1 tsp salt
-1 tsp black pepper
-1 tsp oregano
-3 tsp cumin or more to taste
-1 tsp chili powder or more to taste -1 can full fat coconut milk
-Juice of 1/2 lime
-cilantro to taste -Put all ingredients in crockpot except coconut milk. Cook on LOW 7-8 hours -take chicken out and shred with forks. Return chicken to crockpot, add coconut milk stir and set to HIGH 15-20 more
Top with fresh salsa, avocados, more jalapeños, shredded cheese, tortilla chips

Introducing...sautéed salad. Topped with broiled salmon and avocado. 👌🏼 I prefer eating my salads slightly sautéed this time of year. For one, a warm meal when it’s freezing out is always nice. Two, for digestion.

Slightly cooking your veggies can actually help with digestion and the absorption of nutrients. Especially if you tend to get bloated eating a lot of raw veggies.

Also, something about raw salad mix gets old to me and sautéing it completely changes the game (and I find it easier to eat).🤷🏼‍♀️

Make these Buffalo Chicken Lettuce Wraps from my new anti-inflammatory cookbook! ⠀ ⠀
Buffalo dip is typically jam-packed with tons of processed cheeses and preservatives, but don’t let this veggie version deter you! Steamed cauliflower and soaked cashews are favorites for thickening sauces and dips with fresher ingredients. ⠀

1 pound of cauliflower, chopped ⠀
1¼ cup raw cashews, soaked the night before and drained⠀
¾ cup hot sauce (see Ingredient Tip)⠀
½ cup water⠀
1 tablespoon lemon juice⠀
1 teaspoon garlic powder⠀
½ teaspoon paprika⠀
Sea salt and freshly ground black pepper, to taste ⠀ ⠀
1. Combine all the ingredients in the slow cooker.⠀
2. Cook on low for 5 to 6 hours. Using a blender or food processor, pulse the mixture until desired consistency is reached. ⠀
3. Mix into shredded chicken and add tomato and onion on top of a Romaine lettuce wrap. Enjoy!⠀ ⠀
