RECIPE: Kale and Pecan Salad with marinated onions and Cherry Vinaigrette

This salad is fresh, crisp, with a hint of sour and sweetness; a perfect accompaniment with your summer grilling! I do hope you enjoy it. It does take some advance planning in terms of getting the onion marinated but other than that, it’s super quick and easy to put together. 🔻
Marinated onion:
4 red onions
1 cup apple cider vinegar
2 cup water
1 bay leaf
1/2 tsp salt
1/2 tsp all spice 🔻
Kale and Pecan Salad:
6 Oz (170grams) chopped kale
2 tbsp avocado oil
2 medium carrots
1/2 zucchini
1 cup pecans (you can chose to roast these at 350F for about 8-10 mins; I really like the flavor when roasted, but it isn’t necessary) 🔻
Cherry Vinaigrette:
1/4 cup + 2 tbsp avocado oil
1/2 cup frozen cherries
2 tbsp balsámico
1/2 tsp salt

Marinated Onion: (NB! This step should be done at least an hour before the rest of the salad but preferably 2-3 hours) Put water, vinegar and spices (incl bay leaf) in a pot and bring to a boil. Remove from heat. Meanwhile cut your onion in half and slice. Add to a large mason jar and pour the apple cider vinegar mix over them. It should cover all the onions, so push them down if you need to. This needs to marinate at least an hour but preferably 2-3 at least. You could cook the onion on the stove in the apple cider vinegar mix for 5-10 minutes if you want to speed up the process. This portion will give you leftovers that you can use on top of salad or as an accompaniment with other food. 🔻
Cherry Vinaigrette:
Put all ingredients into a food processor and process until completely smooth. 🔻
Kale Salad:
If you want your pecans roasted, start by heating the oven and roasting pecans for 8-10 mins. Pour the kale in a large bowl and pour over the 2 tbsp avocado oil. Massage the kale well with the oil. Shred the carrot and zucchini and add to the salad. Add pecans to salad. Add about 3/4-1 cup marinated red onions and mix the salad well. Serve with cherry vinaigrette. ❤️

Full fat coconut milk 1/4 of a can
2 tablespoons cacao powder
Some pieces of cacao butter

Organic vanilla extract
Organic sunflower butter
And enough water to make my vitamix go 😂
It tastes like a chocolate milk shake and the best part is - no sugar! Avoiding sugar for me is huge.
