INGREDIENTS:
β€’ 1 cup organic almond milk
β€’ 1 cup strong black coffee
β€’ 1-2 drops liquid stevia
β€’ Β½ cup ice cubes

INSTRUCTIONS:

1. Place the ice cubes in a glass mug with coffee and add liquid stevia.

Come on @delta, you have access to the most amazing Karigold Butter at such an affordable price! A price that would be especially affordable for such a reputable airline. I have flown with Delta many times and this is the first time I have had this happen. I pray that it is a result of some one-off situation and that such a proud American airline will continue to support local American farmers, industry trade and provide the public with what I believe to be one of the best products in the world.

The Airpolane Meal:
Chicken Breast with Ratatouille... - A relatively high protein option with some vegetables πŸ₯’ to provide prebiotic fiber to my gut flora and a micro-dose of micronutrients that have been greatly lacking as I have been relying on butter and fat bombs while travelling.
...and Polenta - While Polenta is considered a relatively healthy Gluten Free alternative in some circles, it is a high carbohydrate food bound to kick you straight out of ketosis and I beg the question, does anyone actually know what it is?
Crackers - I think we can all agree they were immediately off the menu
... and Monterrey Jack Cheese - That had a very small number of ingredients, was listed to be cultured and a great source of dietary fat πŸ§€ So this was chomped on for dessert.
Caesar Dressing - With Soybean Oil listed as the first ingredients on the label, I was very disappointed...
Brownie - Gluten listed as one of the first ingredients, followed by Sugars and Vegetable Oil...straight into the bin bag for this one 😷
Vegetable Oil Spread - Why? Oh Why? I had been so excited for my triple dose of Butter and was heartbroken to see a Soybean Oil alternative being served πŸ˜ͺ
Green salad πŸ₯—I was definitely not going to pass up any more veggies, and how amazing it felt to taste something FRESH! Well as fresh as airpolane food can be... It's safe to say this meal was rather disappointing from a ketogenic standpoint however my peers seemed to enjoy it...at least while they were awake. I see it as no coincidence that everyone around me who finished their meal was asleep soon after, while I sat up working and about 2 hours later felt hungry due to a lack of fat and enjoyed a dessert style @marigold PALEO bar Dark & Salty of course! My favourite... 🍫

Today's Top Tip: How To Navigate Airplane Food πŸ₯˜
Warning: It's a Minefield
Unless you are willing to fast during your travels, maintaining a state of Ketosis can be near impossible, especially when tempted with such appetising foods on board a flight, that the person right next to you seems to be really enjoying.... The easiest way to avoid this decision fatigue of 'Will I? Won't I? Will I? Won't I?' Is to choose the most appropriate ketogenic/paleo friendly foods on the menu and immediately take the others off of my tray and into the bin. My doing this, my brain only recognises the food in front of me as my main meal.
Also, it's a great idea to ask the attendant for extra servings of butter should you still be hungry...it works great for me!

I got the Chile Verde Benny and though I asked them to hold the cheese, as you can see, it came out with cotija cheese sprinkled on top. Though my waiter graciously offered to get me a new one, I don't have a strong dairy sensitivity and I hate to waste food, so I just did what my 7-year-old-self would've done and scrapped the cheese off to the side. No problemo for me! πŸ‘πŸ»

That being said though, if you do have a dairy sensitivity or allergy, don't ever feel like you need to suck it up when the restaurant has made a mistake! You're the one who will be feeling like crap all day, not the restaurant, so never be afraid to nicely advocate for your health πŸ’œ

Also (not pictured)... I had a very cool waiter this morning and he very generously hooked me up with a gluten free pancake, which, HOLY CRAP 🀀 If you ever want to sugar crash and LOVE every minute of it, definitely get the cinnamon GF pancake. I could only get through 1/3 of it, but every bite was heaven πŸ˜‚

What if I told you that there's bacon hiding inside these coconut flour pancakes? Not kidding πŸ₯“πŸ₯ž@jennafreshandfit upgraded these pancakes and turned them into real Paleo breakfast treats. And before you ask... Yes, you can dunk them into maple syrup πŸ˜‰ You're welcome!
INGREDIENTS:
β€’ 4 strips of uncured, no sugar added bacon
β€’ 1/4 cup coconut flour
β€’ 2 large eggs
β€’ 2 T coconut oil, melted
β€’ 2/3 cup unsweetened coconut or almond milk
β€’ 1/4 t baking soda
β€’ Pinch of sea salt
β€’ Grass-fed butter or ghee for cooking
β€’ Pure maple syrup for serving

INSTRUCTIONS:
1. Heat a large griddle over medium heat and cook bacon until crisp. Set aside.
2. In a mixing bowl, lightly whisk eggs, coconut oil and coconut milk. Whisk in coconut flour, sea salt and baking soda until smooth.
3. Melt 1 tablespoon of butter on large griddle over medium/low. Using a 1/3 measuring cup, pour batter onto griddle in strips. Place a piece of bacon onto each strip of batter and drizzle with more batter over the top. Cook until golden, about 4-5 minutes.
4. Flip using a spatula and cook an additional 4-5 minutes. Serve with maple syrup.
