Kick sugar cravings to the curb with this homemade Strawberry and Basil Ice Cream.
Ingredients
• 1 14 oz can full-fat coconut milk
• 3/4 cup fresh strawberries, puréed
• ¼ cup maple syrup
• 1/4 cup fresh basil, finely chopped
Instructions
1. Place the ice cream churning bowl into the freezer for at least 24 hours.
2. In a medium mixing bowl, whisk together the strawberry purée, maple syrup, and coconut cream.
3. Remove the churning bowl from the freezer and attach to the ice cream maker. Pour the strawberry mixture into the machine and begin churning for 20 minutes.
4. Add the basil and continue churning for an additional 25 minutes, or until set.
5. Serve immediately for a soft serve or let it firm up in in the freezer for 2-3 hours. #icecream #dairyfree #paleohacks #paleoicecream #strawberryicecream

This summer has been a busy one and over the past few weeks I have spent more time sleeping in a tent than my own bed ⛺️ This also means that when I open my fridge to wrangle some ingredients together to make breakfast I am often met with the sight of half empty condiments and sparsely populated produce bags. 🥕
When this is my view it is absolutely tempting to say screw it and just go out for brunch, but you know what? I HATE wasting perfectly good food AND I often discover the most delicious dishes when I use whatever I have laying around. 🍳
Case in point is this morning’s breakfast. What you see here is:
•1/4 red onion
•1/2 carrot
•1 stalk of kale
•2 pieces of broccoli
•1/2 cup cooked quinoa
•1/4 cup black beans
•1 tsp coconut oil
•1 egg
•turmeric,chilli, paprika, cayenne, salt and pepper
.
The onions were sautéed, the carrots added in to steam with a bit of water and the rest added to warm for a minute or two before a fried egg was added. .
Eating healthy doesn’t have to be complicated. It doesn’t require expensive, fancy ingredients. It doesn’t take a fridge bursting with produce. It doesn’t have to take hours of your time. It only takes a willingness to try. And I promise that if you try often enough, eating healthy stops feeling like it takes any extra effort at all. If you need help, ask. If you need inspiration, type the three ingredients you found in your fridge into google with the word recipe. I do it all the time!

Ingredients
•1 medium sweet potato, peeled and spiral-sliced on 3 mm blade
•1 large egg, beaten
•1/4 t sea salt
•Pinch of black pepper
Instructions
1.Preheat the oven to 375ºF and line a baking sheet with parchment paper.
2.In a medium mixing bowl, combine the sweet potato noodles, sea salt, pepper, and egg. Use your hands to toss and coat the noodles with the egg.
3.Place mounds of mixture onto the baking sheet and form into circular patties. Bake for 30 minutes, carefully flipping halfway through.
4.Remove from the oven and serve with your favorite protein and veggies!

Get ready for a simple and delicious Keto Raspberry Coconut Bread the whole family will love.
Ingredients
• 8 large eggs, room temperature
• ¾ cup coconut flour
• ⅓ cup ghee, melted
• 1 t vanilla extract
• 1 t baking powder
• ¼ t salt
• ⅓ cup raspberries
Instructions
1. Preheat the oven to 350°F and prepare a 9x5″ baking pan with parchment paper.
2. Place the eggs in a food processor and blend on high until frothy and smooth.
3. Add the remaining ingredients (except the raspberries) and continue blending on high until smooth. Scrape down the sides with a spatula to ensure everything is fully combined.
4. Pour the mixture into a prepared loaf pan and place the raspberries on top. Gently nudge the raspberries into the batter with your fingers.
5. Bake for 40-45 minutes, or until a toothpick can be inserted clean.
6. Cool the bread for 20 minutes, prior to removing from the pan.
7. Cut the bread into 12 slices and serve immediately.
8. Store leftover bread in an airtight container inside the fridge for up to one week. You can also freeze it for up to 30 days.

Put a healthy twist on an Italian classic with pillowy, gluten-free Cauliflower Gnocchi.
Ingredients
• 4 cups cauliflower, cut into florets
• 1 cup tapioca flour, plus extra for dusting (about ⅛ cup)
• ½ cup coconut flour
• 1 large egg
• 1 t sea salt
• 2 T coconut oil
Instructions
1. Steam the cauliflower in a large saucepan with a steamer basket for 10 minutes, or until soft.
2. Transfer the cauliflower to a plate with paper towels and pat dry (you can also wrap in a towel and gently squeeze the moisture out).
3. Place the cauliflower into a food processor and pulse until mashed.
4. Add in the tapioca flour, coconut flour, egg, and salt until mixture becomes a dough. (If too sticky, knead in an additional tablespoon of tapioca flour at a time).
5. Dust a clean countertop with extra tapioca flour and roll the dough into three ropes (about ½-inch thick).
6. Cut the ropes into 1-inch pieces and score each gnocchi with the tip of a fork.
7. Bring a large stock pot of water to a boil and drop the gnocchi into the pot. Cook until they float to the top (about two minutes). Drain the gnocchi and set aside.
8. Heat coconut oil in a large skillet on medium-high. Work in batches and add gnocchi in a single layer. Cook for six minutes, flipping halfway through.
9. Remove from heat and stir in your favorite sauce. Sprinkle with salt and pepper and top with fresh parsley. Serve and enjoy!

Salmon Lettuce Fish Tacos 🌮

You guys can probably tell by my feed that this summer I have been obsessed with fish tacos in a lettuce cup 👌

This past weekend @jays_unhealthy_life made some ourselves & they were 🤤
.
Super simple too & we topped them with a Greek yogurt cilantro avocado lime sauce — details below 👇
.
Cilantro Lime Sauce:
.
2 garlic cloves
1 ripe avocado
1/3 cup Greek yogurt
Juice from 1 lime
Celtic salt & black pepper to taste
Huge handful of cilantro (I loveeee cilantro— if you aren’t a fan mix it up & use any herbs: parsley, basil, etc)
2 tbs olive oil
.
Throw it all into a blender & blend it up until smooth (I used my @vitamixca ) 🌪
.
I also cooked the salmon on the stovetop with some of this sauce + @chosenfoods avocado oil until crispy— YUM. Threw the cooked salmon onto some iceberg lettuce (this is all we had on hand but romaine, butter lettuce or collard greens would also be 👌)— topped with @jays_unhealthy_life homemade pickled red onions (so good), red cabbage, micro greens, baby tomatoes 👶🏻 🍅 , squeeze of fresh lime, & tons of cilantro + the cilantro avo lime sauce— 🙌🙏

Can we please just take a moment to appreciate how pretty my #peach was at lunch today? 😍🧡💕🍑✨
It was also massive (because @costco ) so I shared it with a coworker.

Ingredients:
•3 large sweet potatoes, thinly sliced
•2 T avocado oil
•1 T nutritional yeast
•¼ t dried basil
•⅛ t garlic powder
•¼ t sea salt
Instructions:
1.Preheat oven to 300°F degrees.
2.In a mixing bowl, drizzle sweet potato slices with avocado oil and toss to coat.
3.Sprinkle with remaining ingredients and toss again.
4.Spread the sweet potatoes on a baking rack set on top of a baking sheet and bake for 30-40 minutes. Serve immediately and enjoy.

Dinner tonight was inspired by the Asian noodle bowl I made with @thespicyolive1 & the @sneakymommies 🍜😍

This has quickly become one of my fave meals! I shared the original recipe on my feed but mixed things up a bit tonight based on what I had on hand 🤚

Sesame lime sauce
- 1/4 cup + 2 tbs sesame oil
- 1/4 cup coconut aminos (healthier soy sauce alternative!)
- 1/4 + 2 tbs coconut vinegar (I love @buddhabrandsco )
- juice from 1 lime
- 1-2 tsp fresh minced garlic
- 2 tbs fresh minced ginger
- 1 tbs golden @lakantosweetener (optional* I’ve made this without the sweetener before & it’s just as delicious- you could also add whatever sweetener you prefer instead too!)

I mixed this sauce with fresh spiralized zoodles (see my stories for the best/smallest spiralizer!), thinly sliced red onion & red pepper, fresh mint & cilantro, lightly salted roasted peanuts, cucumber ribbons, mango slices & baked chicken! Highly recommend this meal for any day of the week- make a big batch for supper & take the leftovers for lunch (if there is any left)!😉

To be totally honest I never used to like cheesecake, but... I also never used to like onions or coffee & those are easily two of my favourite things now 😅

Get creative w/ the fruit combos! You could make kiwi lime cheesecakes?! 🥝

This recipe is super versatile & such a fresh summer dessert- it was a huge hit at my place! Sugar & grain free, keto friendly, & DELISH 👅

PS ran out of muffin liners so improvised & made some with parchment paper 👌

Crust
.
1/4 cup coconut oil, softened
1/4 cup powdered @lakantosweetener (or sweetener of choice)
1 cup @bobsredmill superfine almond flour
1/4 cup coconut flour
1/2 tsp almond extract
Pinch of pink salt
.
Mix all the ingredients together until a dry dough forms & line a muffin pan with muffin liners & firmly press about a TBS of the crust mix into each one- I got 12 out of this! Bake at 350 F for about 7-9 minutes until just barely turning brown. Remove & cool while you make the filling.
.
Filling
.
1/2 cup plain Greek yogurt (for dairy free use @kitehillfoods or you could try coconut cream- but I haven’t tried these yet)
8 oz cream cheese (sub for your fave dairy free brand to make dairy free)
1 egg
3/4 cup powdered @lakantosweetener
1 tsp vanilla
Pinch pink salt
1/4 cup collagen peptides
Juice of one lemon (~3-4 tbs)
3/4 cup raspberries (I used frozen)
.
Blend everything except the raspberries & lemon until smooth. This was super easy in my @vitamixca 🙌
.
Using half of that mixture, scoop 1-2 tbs of it into the baked & slightly cooled crusts. Then add the raspberries & lemon to the leftover mix & blend until smooth & creamy. Pour this onto the white layer you just added to the crusts. You can use a knife to swirl the two layers but I only did this to a couple! Bake at 350 F for about 18-20 mins, top should look no longer jiggly & have minimal cracking. Let cool then keep in the fridge for at least 4 hrs- overnight to set!

Key-Lime Matcha Keto Doughnuts 🍩 💚

Hello delicious tasting tangy summery treat🤤

I can’t get over how much I love these! I have been loving fresh & citrusy flavours this summer & these hit the spot big time🤟
.
Healthy fats, grain free, & dairy free you are gonna want to add these to your summer baking list, I promise 🙏
.
Recipe 👇
.
1/4 cup coconut butter, melted
1/4 cup + 2 tbs sunflower seed butter (you can try subbing with nut butter of choice as well but may change the flavour)
-1/4 cup coconut oil, melted
-2 tsp almond extract -pinch of Celtic sea salt
-juice from one lime
-1 heaped tsp of baking powder
-2 eggs
-3/4 cup powdered @lakantosweetener (Or sweetener of choice!)
-3/4 cup superfine almond flour (I love @bobsredmill )
- 1/4 cup club soda, water or nut milk of choice
.

Mix all the ingredients together, & make sure all the lumps from the sweetener are removed. Grease a silicone baking mold & fill with the batter. Bake at 350 for about 10-15 minutes, making sure you don’t over-bake! The top will be slightly bouncy when they are done & lightly browned. .

Icing
.

2 tbs MCT oil
2 tbs coconut butter
1/2 tsp matcha powder
1 tsp almond extract
1 lime juiced (only do 1/2 a lime if you don’t like it super tangy!)
3 tbs powdered @lakantosweetener (Or sweetener of choice)
.
Mix ingredients together well until no lumps left & spread onto cooled doughnuts. I also grated some lime rind & sprinkled that on the finished doughnuts, serve & enjoy!

You can make these into muffins if you don’t have a doughnut pan or mold☺️ #paleohacks

Keto Fudgsicles 🍫

These used to be my FAVE when I was little! I made these to not only be perfect for a keto diet but they are also just a great healthy treat for anyone! Packed with healthy fats-they will keep you full for hours!👌
.
I also snuck a secret ingredient into them😏💚
.
Recipe 👇
.
-1 cup chopped avo (I used frozen then just let them thaw for about 30 mins- fresh or frozen will work though!)
-1-2 pinches of Celtic salt
-1 tsp vanilla extract
-2 tbs MCT or @bulletproof Brain Octane oil -3 tbs melted coconut butter (I love @nutiva & @artisanaorganics )
-2 tbs hazelnut butter (I used a hazelnut/almond butter combo—any nut butter will work but may slightly affect the flavour- but should still be delicious! Cashew or almond butter would be the best subs I recommend!)
-3 tbs cacao powder -4 tbs powdered @lakantosweetener (Or sweetener of choice, you may need more or less depending on your taste preferences- taste as you go!)
-1/2 cup cashew milk (or milk of choice- coconut cream is what I want to try next for extra creaminess & healthy fats!)
-1/4 cup sugar free chocolate chips(I love @lilys_sweets_chocolate ) or sugar free/dark chocolate chips of choice, melted in 1 tbs of coconut butter until smooth (I just did this in the microwave, but you also could over low heat on the stove)
.

Throw all of the ingredients into a blender & blend until smooth. I used my @vitamixca & it got the job done in no time! Pour into ice cream moulds & let set for a few hours. When you want to get them out, run the popsicle mould until warm water for a few seconds & then they should pop out easily!

A healthy yet tasty alternative to cereal bars - they're raw, vegan and gluten free 😍 I eat these lil' guys as a mid-morning snack and even as a dessert 🤷‍♀️

To make them...

Pulse 50g of cashew nuts in a blender under until chopped, then add 175g of pitted dates, 30g shredded coconut and 40g chia seeds until well combined. Add the zest of one lemon and 2tbsp of lemon juice until a dough is formed. Then with slightly damp hands, roll the mixture into balls and roll each ball in shredded coconut.
