Tried something new yesterday .... cow tongue! I guess you could say I'm an adventurous eater🍽. Trying to add organ meat into my diet. First I cooked it in the instant pot then removed the outer skin, sliced and fried it in ghee. Personally I liked it better than liver. I was too creeped out to touch it at first my roomie had to give me a pep talk 🤣 that tongue was huge !!!

BLT in one bite! I could eat about 24 of these things at one sitting. So ridiculously addictive.

Homemade Paleo Fig Newton Cookies

Ingredients

1 cup dried figs
3 pitted Medjool dates
1/2 cup orange juice
2 eggs
1/3 cup coconut oil, melted
2 tsp maple syrup
1/2 tsp vanilla extract
2 cups almond meal
1 tsp baking soda
1/2 tsp salt

Instructions

1. Add the eggs, coconut oil, syrup, and vanilla extract to a bowl. Use a hand blender to combine. Add the almond meal, baking soda, and salt. Blend again until completely combined. Place in the refrigerator to chill until the figs are ready.

2. Place the figs, dates, and orange juice to a small saucepan over medium-low heat. Simmer for 10-12 minutes until the figs are soft and the juice is slightly reduced. Place the mixture into a blender or food processor. Blend until smooth.

3. Preheat the oven to 375 degrees F. Remove the dough from the refrigerator and place onto a sheet of parchment paper. Cover with another sheet of parchment paper and roll out the dough into a long thin rectangle, about 1/4-inch thick.

4. Spread the fig filling across the middle of the rectangle. Use the parchment paper to fold the bottom third of the dough over the top of the fig filling. Peel back the paper and repeat with the top third of the dough, forming a long log. Pinch the ends of the log together to seal in the filling. Use a sharp knife to cut the log into the desired amount of pieces. Space the pieces out on the parchment paper and place onto a baking sheet. Bake for 15-18 minutes, or until the edges are golden brown. Let cool for 20 minutes before serving. Store in an airtight container.

I found these while in the popcorn section why I was there has nothing to do with this post. And I saw in amazement that pork rinds were in a popping bag so I had to buy. The things you find when looking for snacks. Anyway they expand in the microwave and you have fresh hot, crispy pig skins which they held up to the name. I can tell they have some sort of bacon seasoning much like you would get on a potato chip not the real thing. These were a neat snack I give 3/5. I’d buy again just so I can entertain someone by telling them I’m popping me some skins before the movie starts 🍿

I am seriously in the mood for chicken pot pie now that it's starting to get brisk at night. But I haven't had the patience to start working with Paleo pie crust quite yet. So I'm compromising and making Paleo chicken pot pie Soup! Which seems like a fair enough short cut. I do miss that crust though 😣 If it tastes anywhere near as good as it smells I won't be too upset to not have crust.

Eating healthy when traveling is always difficult. So what did I do here for lunch? I hit up the local grocery store and got a carton of organic lettuce, and some pre-made chicken kabobs and threw them in the oven. Easy. Inexpensive. And still Paleo-ish (wasn’t free range organic chicken, but you work with what you can). It’s possible to eat healthy when you think you can’t, it usually just requires a bit more work.
