Good morning!!! Finally the sun is shining - maybe spring weather will actually come! Woke up basically with the crack of dawn this morning (not so sure why 🤔) but it worked out so I could make this yummy breakfast! ATTN: this is my last homemade meal in London!!! 😭 Writing my last university exam today (after 7 years of school!!) and then doing the first haul of my stuff to move back home. Looking forward to a fun weekend with friends and family 🤗
DO IT 👉🏼 Scrambled eggs on top of a @kupiec_pl GF rice cake with lettuce, steamed asparagus (leftover), @traderjoes EBTB spice and some goat cheese. My tummy is really sensitive to dairy, but somehow goat cheese is okay!!

To make the chocolate I melted @enjoylifefoods Dark Chocolate Chips with @nutiva Coconut Butter (just eyeball it). 🦄I’ll never forget sitting in Divination (across the table from Justin Finch Flechley and to the left of Penelope Clearwater) when Professor Trelawney snatched my bowl of tea leaves clean out of my fingers, looked me square in the snout, and told me she saw unicorns in my future. It was far from characteristic of her - she usually predicts imminent death - but, between you and me, I was pretty stoked to hear I could be having a run in with wild unicorns. Anyway, that has literally nothing to do with today’s post.

🦄Some people “poo poo” the idea of Mindful Eating as hokey and weird and a waste of time. I disagree. And not the kind of “I disagree” we sometimes do just for the sake of disagreeing. I mean I disagree because, especially for those who struggle with food anxiety, binge eating, or motivation to stay on track...mindful eating can be amazingly helpful.

🦄There isn’t a single right or wrong way to practice mindful eating. The premise is to focus on being fully present and “in the moment” (I know it sounds hippy dippy but bear with me) when you eat. No rushing around or snacking on the go. When you eat..you full stop, appreciate everything around you, pay attention to how you feel, focus on your food, and remove your mind from your daily stresses to focus on what’s simply in front of you.

🦄To help with that, I made this 8-step checklist (you can save it if you want for later) that you can literally check off as you make your way through a meal. Again, these aren’t the only points to consider but, in my experience, focusing on these 8 have consistently reduced food anxiety, deceased binges, and improved adherence to your diet.

Филе индейки, тушеное с мидиями, грибами шиитаке и вялеными оливками: 🌱филе индейки — 1 кг 🌱свежемороженые мидии — 200 г 🌱сушеные грибы шиитаке — 30 г 🌱вяленые оливки — 200 г 🌱кокосовые сливки — 200 г 🌱кокосовое масло — 50 г 🌱горячая вода — 0,5 л 🌱мёд — 2 ч. л. 🌱лук — 1 шт. 🌱чеснок — 4–5 зубков 🌱розовая гималайская соль и сушеный имбирь по вкусу🌱🌱🌱🌱Грибы поломай и на 30 мин залей горячей водой. На растопленном кокосовом масле обжарь лук до золотистого, добавь порезанное кубиками филе индейки и жарь, помешивая, ещё 10 мин на среднем огне. Положи к мясу и луку грибы вместе с водой, в которой они замачивались. Туши на медленном огне 15 мин. После добавь вяленые оливки и мидии, дай потомиться ещё 15 мин. В конце влей кокосовые сливки, мёд, положи соль, сушеный имбирь и мелко нарубленный чеснок. Дай покипеть пару минут и снимай с огня.
