WATER BUFFALO SOLDIER
A couple weeks ago we were out with friends telling stories that we didn’t know about each other. When it was Nuit’s turn she says “oh I have one!” And in her child-like, super-charged, enthusiastic way she goes “when I was young I fell off a Water Buffalo...” We all started laughing! Not really because it was funny, but because it was so unexpected and just so foreign a concept to us.
How lucky are we to have so many people from other countries and cultures bringing their life stories and experiences to Canada? And then sharing them with us to learn, to grow and even to TASTE! Chef Nuit lived a childhood that was all about food! Hunting, farming, forging, fishing, cooking! From learning how to find Beetles under a pile of cow dung to cook and eat, to finding wild palm hearts in the jungle with her mom to cook and sell.
Selling food with her family was about SURVIVAL, and the game plan was always to make it so delicious that people couldn’t keep away! And now WE get to have all of this FIRST-HAND experience and knowledge brought right to our tables! It’s such a blessing! Diversity is one of the many reasons why I love Toronto so much!
Just through Chef Nuit alone, I’ve learned so many things! Like the foundation of REAL Thai food, insight of the struggles and joys of living a farmer’s life in Northern Thailand, and most importantly...
