Hello sunshine! ☀️Feeling adventurous today? I’m challenged to find New and tasty but healthy breakfast to energize our day besides the old standbys of eggs, oatmeal or cereals. The challenge also is getting enough protein in each meal that we require to maintain muscle and either drop or maintain weight. 🏋️♂️It’s even more difficult to eat gluten/sugar free. I woke up feeling like a warrior today and set out to make my husband a warrior breakfast so he can slay the day and everything he has to do. ☑️In trying to intake approx. 158 or more grams of protein a day as well as 3 or more servings of veggies I came up with these gluten 🆓 sweet potato pancakes , blueberry muffins ,lactaid cottage cheese with fruit topping, broccoli and iconic protein coffee . All together is approx 56 grams in one meal. Whew! Not bad . 😜For the pancakes I puréed sweet potato, paleo flour, 2 eggs, flax seed meal, chia seed, protein powder, honey and spices.
The muffins : paleo flour, honey, fresh blueberry ,egg, almond milk & spices. The berry sauce is just mixed fruit with water and tablespoon of agave heated in pan then cooled.
