Grass fed beef kidney. The fat surrounding the kidney is called suet. Certain times of the year the cattle of the Andes yield far more suet, this animal was younger and didn’t have much fat, but the fat present is a deep orange color due to the high vitamin and mineral content from grazing high in the mountains, closer to the glacial meltwaters that fed her and the herbs she consumed to convert into edible fat soluble vitamins and nutrients unavailable in any plant foods, the most neglected nutrients, needed to build healthy bodies. Sweetbreads soup. Another recipe from our @westonaprice variety meats class we taught a few years ago. We started off with this as our first recipe because sweetbreads (beef thymus) are so mild tasting (#tasteslikechicken !). This soup is also full of carrots, onion, cabbage and a good bone broth. It was a hit! If you think all organ meat tastes like liver think again.

I didn't grow up eating organ meats, but I've learned to embrace them over the years and with lots of culinary trial and error. Nutritionally, organ meats are some of the most nutrient-dense foods on the planet. They are particularly high in a lot of nutrients that are vital to fertility, conception, positive pregnancy outcomes, and brain development (both in utero and through childhood). .....
I did a quick nutritional tally out of curiosity. When compared to an equal quantity of chicken breast, chicken hearts contain:
• 20x more vitamin B12
• 10x more folate
• 8x more iron
• 10x more zinc
.....
I aim to eat organ meats 1-2x per week. It's not a massive quantity, maybe 2-6 oz in total for the week, but the nutritional boost it provides is huge. I notice an immediate and sustained improvement in my energy levels, concentration, and stamina.

My lunch here is chicken hearts (whole) that were marinated overnight in plain kefir, then tossed with organic corn masa, sea salt, and smoked paprika. I pan fried them in a 50:50 blend of lard and tallow (both rendered from my pasture-raised cow and pig share—you could do one or the other or opt for coconut oil, I just like the flavor of a mixture). And no, I'm not concerned about the carbs in a little corn masa or the carbs in some fresh snap peas. 🧐

I eat all kinds of #liver. My favorite way to serve it is pate but I also enjoy it with a #salad. I like to include both sweet and sour elements in the salad, then. Here, orange and apple, but it's even better with prunes if you're ok with the higher sugar content. Oh, and balsamic vinager 😋#organmeat is so #nutrientdense , be sure to include it in your diet on a regular basis. This was my breakfast, by the way 😄

Here's a watermelon, beef heart salad that we taught in a class a few years ago. The recipe is similar to the one that @kitchenkop just posted, except with slices of seared beef heart! It was part of a variety meats class that I and some volunteers from the local @westonaprice chapter put on. This was one of the favorite recipess from the class (although they were all great). Have you tried heart? What did you think? I think it tastes like a lean flavorful steak. -

I received this request, “Mommy, please have green olives and liverwurst right now.”

Now, even I was a bit surprised! My kids have a unique palate but I was pretty pumped about this one!

I asked for fun, “Annabelle, do you want to start with your blueberry muffin and applesauce?” (Every morning I have some sort of muffin (see my blog for a bunch of grain and gluten free muffins and applesauce with fish oil. Probiotic and vitamin D/K2.)

Annabelle said, “No, green olives and liverwurst are better. I’ll eat my applesauce and muffin next.” 😂

Well there you go, the wisdom of a three year old. .
Kids know what they are exposed to. Give them a chance and they may surprise you! Think about how you feel after eating a healthy meal. Do you feel energized, satisfied and have good digestion? Kids make this connection too! .
