Chickepea is the new super food 🙄
I can't help but have a massive eye roll moment when I hear things like these. Why ?! Why do we only notice the positives in our diet and culture when the west promotes it. Be it aloe vera , turmeric or now our humble kabuli chana ! All this only goes to prove that your aaji was correct all along !
Anyway .. I made this amazing chickpea curry .. nothing like chole (though I love north Indian chole bhature ) this gravy is a little South East Asian.
Served with rice - added with some leftover quinoa and dried parsley and a nob of butter.
Along with beetroot and tomatoes koshimbir.. This Curry is so good I ended up drinking just the curry fifteen minutes after lunch , cause I couldn't get enough ! I'll.DM the recipe if someones wants it .. not writing a long things here !!! #amillionspices

Is it the weekend yet !? Prawn Hirva Masala.
I decided to make this restaurant classic at home and frankly I'm not eating this out ever !
Start by making a green paste by grinding
1 small onion
1 inch ginger
3-4 garlic
1/2 cup chopped coriander leaves 2-3 green chilies
1 tbsp water if required but I suggest you add a tsp of oil a
pinch of salt
Once you are done with the paste in large kadhai heat
1.5 tbsp oil
1medium sized onion chopped into julienn
12-14 curry leaves
Saute add the green masala and let the masala split then add
20-22 medium sized prawns (de-shelled and de-veined keep the tail on if you like .. it's what flavours the prawns more .. I didn't this time ! )
1 tbsp tamarind pulp - this is the game changer !
1 t/s sugar
And add 1 cup of stalk water or regular water and let it bubble
Salt and turmeric as per taste and you are done my friends
Word of caution though , prawns take about 4-5 minutes to cook .. slightly more and you'll over cook them and then there is no fun in that !
Eat with Poli , rice , neer dosa , appam or as is
Weekends are excuses to go heavy on seafood !

Chicken quesadilla
Marinated thin strips of chicken in taco seasoning, garlic, salt ,cummin and coriander .. let it sit for an hour
Finely slice one red yellow and green bell pepper .. and two onions
Meanwhile .... Make
Pico de Gallo:
Finely really finely , dice 1 onion , 3 tomatoes 2 green chillies a handful coriander (tip-finely chop and add the stalks) and squeeze the juice of an entire lemon !
Sour cream:
so I have made sour cream thrice before and failed
The trick is to simply whisk full cream with one spoon of vinegar. And leave for an hour in the fridge, if it doesn't set then you can substitute the sour cream for Greek hung yogurt (epigame)
Pan sear the chicken in one tbsp of oil and keep aside
Saute onions and bell pepper in the same pan / wok
On a grill pan, grease the base with some oil .. place a tortilla (tip- buy multigrain) add ample cheese , it's the glue that holds everything together, so be generous, add both the peppers and the chicken and and scatter some coriander leaves, salt, pepper , some more taco seasoning if you like spicy and cover with the second tortilla. Five minutes on both sides till golden perfect and bam !!!!!!!! All of this cause @iravengurlekar

Afternoon snacking.
I'm not a fan of open sandwiches but they do look hella good for the gram.
Thought I'll keep it simple with a multigrain brown bread toasted to golden perfection.
Slathered a huge amount of spicy mayo. DM for recipe
Boiled eggs
Chopped cherry tomatoes
Finely chopped green chilli and coriander !

Simple and easy.. pesto chicken with cherry tomatoes.
Using a mortar and pestle.. old school style
A handful of basil - 4 cloves of garlic , salt and pepper , and almond flakes (didn't have pine nuts and almonds are better) and kept adding olive oil in parts.
Made gashes on the chicken breast. Rubbed the pesto on the chicken and pan sear for 10 minutes on the side of the gashes .. then turn and cover and cook for 15 minutes .. Just when you have three minutes before getting done add sliced cherry tomatoes to your pan.
Use minimum oil while cooking as the pesto has oil. Right before serving bast the chicken with the oil and juices in the pan.
And serve .. This is more about technique and details than the recipe .. The process is as beautiful as the end game.

As Indian as a pasta can get.
As the sister of a pregnant cousin let me tell you that these cravings they talk about, are real !
Yes , my cousin sister is pregnant and I am leaving no stone unturned to papmper her.
And it starts with this sadly.. She mentioned that she was craving .... And I quote "dirty Indian white sauce pasta" which according to me is equal to a shameless amount of cheese.
Never ever .. never ever ..ever ever will I make pasta like this if its not on the request of a pregnant woman ! 😲
Brought water to a boil
Added around 3-4 types of ( leftover) pasta and cooked to perfection 😊
Saute one onion
One red and yellow bell pepper each
Half a zucchini and half a broccoli
And of course a couple cloves of garlic
Add this to a bachemel sauce ( DM for recipe ) and mix it all. Add chilli flakes salt and pepper to taste and lots of cheese.
I added the veggies to make this super carby pasta a little healthy.
She had the entire thing and requested me to make another batch for munchies at night

Spaghetti in a summer sausage sauce.
Grilled the chicken sausages in a grill pan (I prefer Italian sausages over regular but if you don't find any it's ok)
Saute
2 Onions finely diced..wait till they are translucent
Add 6 cloves of garlic finely chopped.
2carrots grated
200 gms of chopped mushrooms. -button
And saute
And a pinch of salt
Lots of pepper
A spoon dried parsley - I feel like a cheat but didn't get fresh parsley.
Add tomatoes sauce - which is three tomato's blanched and then crushed by hand (some Italian nonna out there will be proud of me ) Add the chopped sausages to pan.
Add a bay leaf and
Let the sauce bubble.
Cook spaghetti as per package directions and toss in the spaghetti when ready.
Garnish with regular parsley or flat leaf like I have and serve.
If you use whole grain wheat spaghetti you get extra points in the diet dept.

Burnt Garlic - dark soy- honey- oyster- lemon- salt pepper - chilli flakes - toasted seasame Sauce !
I normally don't go for noodles but I like flat wheat ones, though I think these were a little over cooked 🙈
This bowl is packed with protien and fibre and if you minus the noodles it's a low carb option.

Wintery mushroom barley broth soup
Boil a cup of barley in two cups of water
Add sea salt pepper ginger spring onion coriander stems and bay leaf to the pot.
The barley should cook in 25 minutes, strain the barley, and separate the spices and condiments (you can keep them if you like, but it might over power your broth) and DON'T throw the water - that's your broth.
In a medium sauce pan
Saute shallots ,garlic, oyster mushrooms,fresh baby spinach and coriander (all.things either finely chopped- I left them whole)
Once cooked add the barley and the broth water and let the pot shimmer for 15. Leave the broth to rest with the lid on for another fifteen before you serve .. this is what helps the flavour infuse into the water. Serve

All this rice made me really crave some pasta !
Rotini in a creamy mushroom sauce... This isn't my recipe it's @thedomesticgeek1 s or inspired by Sarah Lynn. She is the best.
Saute shallots and garlic till translucent and add in freshly chopped parsley (not flat leaf)
Add button mushrooms, the more the merrier. Add a cup of whole milk. And a spoon of all purpose flour slurry add in broth and pasta.
To make this one pot wonder.

I love seafood and I'm willing to try it wherever I go.. but no matter what I eat, rawa coated tava fried prawns and surmai remain my favorite. medium sized prawns ( go to your local fish market on Tuesday / Wednesday for the best price) that the fisherwoman - kolin cleaned and deveined for me , about 250 gms for 300 bucks is a good deal I think.
Make coating using
Rawa
Salt pepper
Red chilli
Malvani masala
And turmeric
Tava fry in vegetable oil (mustard if you wanted an added pungent taste)
and Bam !
Same thing for the surmai

I was like seriously exhausted of eating rice and steamed vegetables and was just exhausted of all the spice.. but just as I was about to give up completely, this lunch happened !
Chicken curry, that was a relative of regular gavran chicken from the plains of Maharashtra.
Crispy bread that seemed to be a great amalgamation of kombdiwade and bhatura (I ate too many)
Red rice cause you can't avoid Jesus at church.
And stir fried pumpkin that made my heart sing with joy as it wasn't spice but rather flavourful. This traditionak bhutanese plate with an Indian twist made me super happy.
