Marinated thin strips of chicken in taco seasoning, garlic, salt ,cummin and coriander .. let it sit for an hour

Finely really finely , dice 1 onion , 3 tomatoes 2 green chillies a handful coriander (tip-finely chop and add the stalks) and squeeze the juice of an entire lemon !

The trick is to simply whisk full cream with one spoon of vinegar. And leave for an hour in the fridge, if it doesn't set then you can substitute the sour cream for Greek hung yogurt (epigame)
Pan sear the chicken in one tbsp of oil and keep aside
Saute onions and bell pepper in the same pan / wok
On a grill pan, grease the base with some oil .. place a tortilla (tip- buy multigrain) add ample cheese , it's the glue that holds everything together, so be generous, add both the peppers and the chicken and and scatter some coriander leaves, salt, pepper , some more taco seasoning if you like spicy and cover with the second tortilla. Five minutes on both sides till golden perfect and bam !!!!!!!! All of this cause @iravengurlekar
