Leftovers for lunch! Diced ham, peppers, onions, pineapple, with garden cukes, purple peas, and of 3 kinds of lettuce. I added a little leftovers rice and tossed everything, but the lettuces, together in a little avocado oil, rice wine vinegar, a spoonful of the new sweet chili sauce from Costco, a dash of coconut aminos, a little grated ginger, and a fresh squeeze of lime to make one delicious salad! Oh and cause there wasn't enough flavor goodness going on already, I topped it with crushed cashews. Yeah, it's ridiculously satisfying and a great way to get a variety of leftover food and fresh veg into an easy one bowl meal for these hot summer days!
