Studying oncology nutrition gives me the best meal ideas. Chicken stuffed with spinach, parsley, and onions. Organic chicken contains choline and vitamin b12. Spinach is high in folate and betaine. Broccoli is high in vitamin C and protects against DNA damage and facilitates DNA repair. Parsley contains coumarin, which helps reduce platelet aggregation. Sweet potatoes are high in beta carotene, an wonderful antioxidant. Good News About Breast Cancer?

Breast cancer doesn’t happen overnight. By the time a lump is detected, it may have been there for forty years or longer- what doctors call “early detection” is actually late detection. As many as 39% of women in their 40’s already have breast cancers that may be too small to be detected by a mammogram.
The good news, is that we may be able to slow the growth rate of these hidden cancers. Dietary prevention and treatment can end up being the same thing so you may die with tumors rather than from them. How do we know this?
Autopsy results show that as many as 20% of women aged 20-54 who died from unrelated causes, had hidden breast cancer tumors that were in the initiation stage.
Choosing a diet that not only prevents the initiation stage of cancer but also hampers the promotion stage is critical (when the cancer grows large enough to pose a threat). Which diet is best supported by evidence for breast cancer prevention? The American Institute for Cancer Research (AICR) came up with ten recommendations on cancer prevention and stated: “Diets that revolve around whole plant foods- vegetables, grains, fruits, and beans- cut the risk of many cancers, and other diseases as well.” www.backtobalancenutrition.com

I believe in #dessert. Tonight we had #avocado pudding topped with #cocoanibs, graham crackers and #strawberries. The pudding is super easy. In a food processor combine 1 avocado with 1/4 cup baking cocoa, 1/4 cup maple and 1/8th tsp vanilla. So rich and decadent. Can easily swap any sweetener in you want. I haven't tried it but have considered just using a super ripe banana instead. I like the cracker for the texture but leave out for a #glutenfree version. This makes 3 perfect portions. .

Crafted this #betacarotene rich soup to start dinner tonight. I'm calling it BetaCurryTene soup! Ha! .
. 1 Tbs olive oil
. 1 yellow onion, diced
. 1 celery stalk, chopped
. 1 garlic clove, minced
. 1 acorn squash, cubed
. 1 sweet potato, cubed
. 4 cups broth (chicken or veg)
. 1/2 can full fat coconut milk
. 1/2 lemon, juiced
. 2 Tbs curry powder
. 1 tsp ground ginger
. 1 tsp nutmeg
. 2 tsp salt
. 2 tsp black pepper

Directions:
1. Saute onion and celery in olive oil for 2-3 minutes until it starts to soften. Add garlic and cook for about a minute, stirring constantly.
2. Add broth, sweet potato and acorn squash.
3. Bring to a boil then reduce heat to low/medium and simmer, covered for about 15 minutes or until the potatoes are soft.
4. Add coconut milk and spices.
5. Use an immersion blender or regular blender to puree the soup. Don't burn yourself!!

I garnished mine with chopped scallions and paprika. .
Beta carotene is an amazing antioxidant that will help to fight disease and inflammation. Plus it's well known to support eye health. This soup is very satisfying! I made it as a starter and was full after haha! .

How pretty is this!? I finally tried using #sweetpotato instead of bread for my #avocadotoast. I used a mandolin to slice my potatoes thin, but you can use a knife just as easily. They need to fit in the toaster. I took me toasting these about 3-4x to cook them and get the texture right. Then I just topped with #avocado and #redpepperflakes. Delicious way to reduce the #carbs and make a #glutenfree #breakfast. So much #antiinflammatory power here!!!! Fight disease and stay #healthy with a hearty dose of #antioxidants and #healthyfat first thing in the morning.

People who regularly exercise will reduce their risk for most major cancers by about 50%! That's more than any other intervention available to us. To get the benefits do 30 minutes of brisk walking 5 days a week. More is better! Also, if you are sitting down all the time get up and walk for two minutes every 90 minutes. Sitting is the new smoking! .

Acredito no poder da nutrição, que nosso corpo foi feito para se curar e se defender, e que Deus fez tudo perfeito na natureza.
