That Anytime Egg Roll
This has been such a favourite in our home, that we have it often for breakfast, lunch, as a snack and sometimes even dinner!
I cooked spring onions in seasoned mustard oil. I added in whipped eggs, fresh coriander & red chilli thecha (that I bought at the Bhimtadiyatra) & topped with cheddar cheese.
I topped this with a whole wheat paratha and then flipped over and cooked till the eggs were set.
So so filling😍
Footnote: Thecha is a combination of chillies (green or red), garlic, salt and lime. Sometimes cooked, sometimes eaten raw. It's a speciality of my home State - Maharashtra. And I love it❤❤
