Excuse me while I lick the mess out of this yumminess on my plate! Also, excuse me while I pat myself on the back because I am so proud of how my first okra soup turned out. Even my husband who claims he would never EVER eat okra (and I have never seen him eat okra in our 10 1/2 years of wedded bliss), is all up in the pot for more😁.
He(fine husband mentioned above😚) is the reason why I never made Okra soup at home. He never liked it, so I didnt bother making or even trying it. Of course, he doesn't decide what goes in my tummy, but I'm not too crazy for okra the veggie itself. *
Recently, I decided to try it. At first, I thought it has great flavor, but then I would get frustrated eating mostly the garri/fufu with little soup. Once I figured out a technique to scoop the soup up, I actually started to fall for it. I was wrong about this slimy, delectable dish and so is my husband! *
I followed @immaculatebites recipe to make this okra soup. I love the inclusion on Egusi and fresh spinach in this dish. I didn't have anymore powdered Egusi, but I did have some leftover Egusi soup in the freezer that I just threw in there. Whoooo! Yum!!!
Btw, Matthew has always loved this soup! He makes his grannies' heart explode because she loves to feed him okra and garri- she loves to feed him period. He never says no to food🤣. *
Moral of the story: you never know what you like until you try it😅
