Today's breakfast was this yummi 🍌Porridge. The recipe is very simple: 2 cups of oat milk, 1 cup of oatmeal, 1.5 tbsp freeze-dried 🍌powder @feinstoff and 1 tsp Energy Powder (maca, green coffee and guarana) @lebepur. I topped my oatmeal with 🍌🐒, passion fruit, blueberries, borage, dried marigold and a red dahlia #heaveninabowl. I always pick the petals before eating (as you can see in my story). Meat is actually considered a carcinogen (which means it has been linked to causing cancer), one egg can be related to smoking 15 cigarettes, and milk is known to weaken bone mass, cause osteoporosis, and it's there to grow a baby calf into an adult cow so it definitely affects your waistline, too! Knowing all of this + the fact that all of these foods (animal products) are causing diabetes (not sugar or carbs) do you still want to eat them? Do you want to continue feeding them to your children? You have an ethical choice everyday that affects the animals, the planet and you! Quickest lunch ever 👌🏻 Baked tostada shells + @simpletruth4u fat free refried beans + homemade queso (adapted from the cheese sauce on the blog, I include how to make it - I used all tofu this time) + hot sauce & cilantro 🤤 This is why I prep big batches of sauces and stuff for each week. Breakfast this morning was fresh homemade banana bread with a chocolatey swirl! 🍌🍞🍫
Over half of this loaf is gone already, but not to worry because it is #oilfree , #refinedsugarfree and most importantly, #vegan!😋

Recipe:
3 overripe bananas | 1 flax egg | 1/2 tsp vanilla extract | 1/2 cup coconut sugar | 2 tbsp maple syrup* | 3/4 unsweetened plant milk | 1/2 tsp salt | 1/2 tsp cinnamon | 3 1/2 tsp baking powder | 1 1/4 cup almond flour | 1 1/4 cup wholewheat flour | 1 1/4 cup rolled oats

Method:
Preheat over to 350˚F and line a bread pan with parchment paper.
Combine wet and dry ingredients in separate bowls and then add dry mixture to wet.
For chocolate swirl (optional), combine 1/2 cup melted vegan chocolate chips with 2 tsp cocoa powder and then mix in 1 cup of the batter.
Pour both batters into pan and then swirl with a knife to create marbled effect. Optional (but recommended!): slice banana in half and press into top
Bake for approx. 1 hour and let cool completely before serving! For every serve that remains, add 1 whisked egg. Add 1 teaspoon baking powder and extra spice (if used in original porridge recipe. Here- cinnamon, ginger, vanilla). Bake at 180 degrees for 12 mins. Serve warm with nut butter, fruit, and/or coconut yoghurt.

It's days like today that make me sit and think about what I'm passionate about. What makes me excited? What helps me to thrive? I think of all of the things going on in my life. A big move, minimalism, getting ready to toss my comfortable life in Vegas away for a life of adventure. What possessed me to do that? Thailand. Traveling to Chiang Mai changed my life. Meeting influential people who literally live the coolest nomadic life. Traveling to different countries, seeing the world and doing what they love. Just the act of traveling truly burns a fire in my heart. It helps me to look forward to more, experience new ways of life, be the person I'm supposed to be. I can't wait to experience Australia. A place I always dreamed of as a child. It seems insane that I'm even able to do what I'm doing, but it's because I gave myself the opportunity to do it. I gave up things in my life that may feel "comfortable" but didn't mean that much to me. Doing that makes room for so much more. Any travel plans coming up??? Let me know in the comments ✈️
