The base is kale and romain which is tossed in a lemon tahini dressing from @ohsheglows

I topped it with falafels, egg salad, cucumbers, cherry tomatoes and goats milk feta.

This bad boy was so filling I couldn’t even finish. It was delicious and kept me satisfied for hours.

Recipe
LEMON TAHINI DRESSING
-1/4 cup tahini -1-2 cloves of garlic
- 1/2 cup fresh lemon juice
-2-4 tablespoons nutritional yeast
- 1/3-1/4 cup olive oil
-salt and pepper .
Add it all into a food processor and blend until smooth. Can be kept in the fridge for up to a week!

Now that we are home from our summer vacation, it's back to reality for us! I'm spending my morning drinking copious amounts of Chai Tea and working on our meal plan for the week 🥦🍏🥑 I always dread the end of a vacation, but I am looking forward to getting my diet back on track and hitting the gym again 💪

New granola bowl from, you guessed it, @ohsheglows Angela Liddon! She calls it her “Vanilla Super-Seed Coconut Chip Granola” and it does not disappoint! 🥥💫🥄 It was so easy to make & I have been enjoying it for over a week now- her recipe made so much 😋✨

Because of how many nuts and seeds it incorporates, this granola is full of protein! It’s been a great way to start my day and get my body what it needs (tbh, lately I’ve been lacking in the protein department). So I usually pour 1/2 cup in a bowl, top it with some bluebs and let it soak in almond milk for a few min!
I eat a bowl of this in the morning & I am full/satisfied throughout my whole shift. It gives me the energy to continue running around the hospital which is all a girl can ask for sometimes👩🏻‍⚕️💉🏥

Well, this was worth all the trouble lol. I have yet to find a vegan dessert as satisfying as the @ohsheglows Everyday Peanut Butter Lovers Chocolate Tart. I’ve made it many many times, it’s simply unreal. Rich, decadent, creamy.

Roasted, seasoned mini-potatoes. Need I say more?

Easy Peasy Steps:
-Preheat oven to 425 F -1 bag of mini potatoes
-Slice potatoes in half (my husband did this. I don't have the patience and my #concussion symptoms were fierce yesterday)
-Toss halved potatoes in bowl with 2 TBS olive oil, 1 TBS 9-spice mix* from @ohsheglows -Add a few grinds of fresh black pepper (optional)
-Placed potatoes flesh side down baking sheet lined with parchment paper. Try to space them out so they don't touch.
-Bake for about 30 min. -Enjoy with your choice of dipping sauce, or plain!

My toddler of course demolished it. My preschooler ate half a purple potato. 🤷🏽‍♀️ At least she ate 1/3 of a burger with a 1/4 cup of ketchup. 🙄
