Finally a food that I can say I'm proud of to make, is freaking delicious, and has more of an identity tie to myself ^________^
New for summer. Green Gazpacho tears with tonda squash. Squash that wants to be a melon with speck. Zucchini stem bolognese. First of season tomatoes and melon. Prosperosa eggplant with egg. Tuna and green tomatoes. Stone Barns duck, radicchio, and berries. NY162 potato, okra with Stone Barns duck offal. Peach melba. Blue Hill Farm milk crepe soufflé.

Psst, I'll let you in on a secret....I didn't peel the beets! 😲 It's time consuming and unnecessary. Plus, not peeling makes cleaning a lot easier as I didn't have to deal with stains💃🏽. *
AIP BREAKFAST FROM SCRATCH IN 10 MIN😍 . Wow absolutely surprised how delicious it was and it contained offal 🐔👌🏻 . INGREDIENTS: ~ 2 rashers of bacon ~ 1/3 of a cup of chicken liver ~ 1 medium onion (optional) ~ 5 (or more) medium mushrooms ~ 1 cup of kale ~ 1 carrot ~ 1 tbsp of coconut oil ~ a pinch of #Himalayan pink salt . METHOD: Warm the skillet and melt the coconut oil. Fry bacon for 2 min and add sliced onions. Stir to ensure that onions are coated in oil and add roughly chopped mushrooms. Fry on a high heat for about 4-6 min. Add liver and stir. I have waited until it turned brown and broke it into smaller pieces with a wooden spatula to save some time. Add kale and carrot ribbons made using a vegetable peeler. Fry for 2 min or until kale is soft. Season with a pinch of salt and serve. . I have served it with some red cabbage with apple. . So quick and delicious. I am shocked I was able to eat liver just like this without covering its flavour with some strongly flavoured sauces. I think it’s because I managed to get a really good quality organic chicken liver from grass fed 🐓😍. In the past I have used loads of garlic and plenty of other spices just to not to taste liver and still couldn’t eat it 🙈 but this simple meal was so delicious without overpowering taste and it made me happy as I knew how nutrient dense it was = healing☺️ .
