Salmon Tacos With Cabbage Slaw
Ingredients
1-pound skinless salmon fillet
1 teaspoon cumin
¼ teaspoon salt and black pepper, each
2 tablespoons olive oil
2 cups thinly sliced red cabbage
1 avocado, chopped
3 tablespoons lime juice
8 corn tortillas, warmed
Cilantro

Directions
Season the salmon with the cumin and ¼ teaspoon each kosher salt and black pepper. Cook in 1 tablespoon of the oil in a large nonstick skillet over medium-high heat until opaque throughout, 4 to 6 minutes per side; flake.

Meanwhile, toss the cabbage and avocado with lime juice, the remaining oil, and ½ teaspoon kosher salt.

Serve the salmon in tortillas with the slaw and cilantro.

There are five main varieties of salmon:

Chinook salmon is highest in fat, most expensive and desired for its silken texture.
Sockeye salmon is lower in fat, but still has enough fat for the salmon flavor to come through.

Humpback salmon is more delicate, pale in color, and not consumed as often

Raised from eggs on an MSC certified diet, in low density, deep-water open-ocean pens in the Sea of Cortez. DYNAMITE FISHING - literally using explosives to stun or kill schools of fish or
CYANIDE FISHING - using cyanide to stun the fish, knocking them out but keeping them alive, so they can be easily caught.

There are 9 species in the Seriola or "Jack" family, but not all Jacks are yellowtails. These are Seriola Rivoliana or Almaco Jack. In Latin America they are referred to as Pez Fuerte. They don't have yellow tails. Their distinguishing characteristics are that they are ridiculously strong fish ("Pez Fuerte") and they have a brown or amber vertical stripe on their foreheads that changes color when they are excited or flirting with potential mates. Raised from eggs in the Sea of Cortez via open-ocean mariculture on the cleanest diet around, they become @omegablue.us Baja Kanpachi and are quantifiably free of plastics, heavy metals, radiation, antibiotics, hormones or stress. They are not cheap, because we feed them a gourmet diet for 1-2 year and require lots of space to swim in pristine water. It's our mission to evolve the seafood supply chain to work symbiotically with the ocean. Baja Kanpachi are mitigating pressure on the wild-stock population and helping redefine the model for open-ocean aquaculture. Nothing against yellowtail, but that's like calling "PACE Hot Sauce" a Mexican Salsa, or calling a California roll, sushi, or calling wild pheasant a chicken.... or calling all Latinos, Mexican. The agility, speed and confidence of a healthy mature sea lion allows them to out maneuver just about any solitary predator in the sea. It's inspiring and humbling to spend time with a marine mammal that often sun tans on the beach like us but is also so well adapted to life at sea. This guy is one of our neighbors in La Paz but since we don't feed our fish sardines they pretty much leave the Baja Kanpachi site alone but can often be seen hunting near by. When approaching seal lions on land they will bark aggressively or retreat to the water. However underwater their confidence soars and they will often approach with the curiosity of friendly dog looking to play with a stranger. #oceanraised #seaofcortez #marinemammal #pelagic #bluewater #lifeaquatic

Chef @jubei_usagi used a sukibiki technique to perfectly remove all the scales leaving the skin unscratched for Chef Josiah to combine French technique with local Baja ingredients in what some people we calling the best grilled fish taco they've ever tasted. Every day spent in Baja is special, but we're particularly grateful for days like these when we get to share the experience with friends. From the wine county to the ocean, Baja California has so much beauty and culture to offer.
