“It’s almost May and you know what that means… SUMMER! ☀️ I can not wait for summertime picnics, beach parties and backyard BBQ’s. When this time of year rolls around I am ready to start bringing mealtime outside. I am also ready to start making some of my favorite summer foods, like the the quintessential Summer side, String Bean and Tomato Salad” - 🎯 Make it below 👇 - -

INGREDIENTS:
12 oz Green Beans/String Beans
1/2 small white or red onion sliced thinly
6 Campari Tomatoes quartered
1 tsp Dried Oregano
Pinch garlic salt
Pinch pepper
3-4 Tblsp. @centofinefoods Organic Extra Virgin Olive Oil
1/4 cup White Balsamic Vinegar

INSTRUCTIONS: - Par boil the string beans until cooked but still firm. Let them cool. - In a bowl combine cooled green beans, sliced onions, tomatoes, seasonings, olive oil and vinegar. Mix all together and let sit for a few hours or overnight.

After a pretty fantastic weekend, Monday game is 🔥. Post-workout I couldn't decide if I wanted salad or ice cream so a green smoothie was in order. This one has pineapple, mango, spinach, mint, and coconut milk and tastes like a piña colada (no added sugar needed 🙅🏼‍♀️). Don't be afraid of the green! 🌱 Chlorophyll is a powerful antioxidant with strong cleansing and detoxifying properties, and noooo I promise this doesn't taste like salad (but if you like gazpacho, you might actually enjoy a savory green smoothie). (Incidentally, #earthday was yesterday and this #plantbased beauty would have been perfect. But really, if you respect your body and other living things and our environment, every day is Earth Day, right? 🌍🙌🏻)
