Chive & Beef Momo | Tibet | $6
β€’
β€’
Momos, or Himalayan dumplings, originated within South Asia but there are different opinions about their exact origin and spread. The most common opinion is that they are from Tibet and spread to neighboring countries as the Tibetan diaspora spread, or through traveling Nepalese merchants. They are generally associated with Tibet, Bhutan, Nepal, and northern India.
β€’
β€’
Momos are now quite distinct based on where they come from, as fillings were refined based on the market they were serving. They are either shaped in a round pocket or half-moon crescent, steamed or fried, and served with a tomato-based chutney. Here it is served with chives and beef inside, and steamed in a round pocket.
β€’
β€’
Originally, the filling was yak meat due to the scarcity of vegetables in Tibet and they began as a peasant dish, primarily made because flour and yak were cheaply available. Tibetan cuisine reflects its mountain landscape and has influences from neighboring India and Nepal, as well as China who once ruled it. The cuisine is made to provide protein, fat, and warmth due to the harsh conditions of Tibet.
β€’
β€’
The last two decades have seen an influx of immigrants from Himalayan countries to America due to various reasons: civil wars, escaping regimes, and expulsion. A natural landing spot became Jackson Heights in Queens, New York as it already was a large Indian neighborhood with existing South Asian ties. Here, immigrants continue to evolve the momo, taking influences from surrounding neighborhoods and Western culture.
