So the past week was cRaZy!! Long days and late nights. I’ve been busy putting in the work it takes to grow a nutrition and lifestyle coaching practice. Just look at all of the homemade, all natural products I made! And the gorgeous labels and banner from @tyriandesign.
I’ll admit the past 6 months I went through a total funk! I didn’t promote myself or business hardly at all. I didn’t make products for the vendor shows I usually do. As a matter of fact I got lazy and put my health on the back burner and sulked for a bit. Because guess what? I am not perfect, I don’t pretend to be and we all have setbacks. We just have to remember to pick ourselves up and get back on track. Thank God I have the tools and support to do just that! And that’s how I can be there for you.... I’ve been in your shoes! I’ve walked a similar path!
Maybe it was because mercury was in retrograde? Maybe it was because the Lyme Disease was flaring? Or maybe I just needed to rest and digest in all I have learned and figure out what I want for myself and my clients.
I want health and healing for the long haul! But what does that look like for us individually? Well that’s just it! It is very individual. What I need and what you need are two completely different programs. But we all need to start somewhere. I like to start by removing toxins in our home and body products and by making manageable dietary changes. I want the program for you to be sustainable! How do we get there? Through a thorough interview and questionnaire to figure out your health goals and then a series of meetings where we discuss progress and you implement the changes recommended. I won’t lie, it’s hard work! But only as hard as you make it and it will be so much easier having a guide 🤗

Quinoa mixed veg salad is a great standby to have in the fridge for filling up lunch boxes and is easy to make as well.
Rinse a cup of quinoa in a sieve under the tap. Place in a saucepan with two cups of cold water or stock. Bring to the boil, cover and simmer until cooked and most of the is water absorbed. Take off heat and keep lid on until ready to use.
Peel and chop a small butternut squash, a sweet potato, half red onion and some green pepper. Spread out on a roasting tray and add splash olive oil and seasoning. Bake in hot oven for about 15 mins stirring in between.
When cooked tip the cooked quinoa onto the veg in the tray and mix to absorb the juices.
Delicious warm on its own or with crumbled feta. Also really good the following day cold with chicken or salmon.
Quinoa is good source of vegetarian protein. Butternut squash and sweet potato have heaps of beta carotene. We can convert beta carotene to Vitamin A which is necessary for healthy skin, the immune system and good vision.

Favorite food: I love a perfectly cooked egg! I also love hearty soups and stews in the winter time, and I love super ripe figs! Also dark chocolate...I can have four favorites right?
Favorite holiday: Christmas, duh! Already counting down...although I do love fall and pumpkin everything
Favorite color: GREEN! The color of life 😊
Something I’m good at: I’m an avid runner and I enjoy cooking from scratch
Something I’m working on: negative self talk inner healing, and my own health (shout out to nutritional therapy!). Such an important piece to feeling well
Something I’m proud of: graduating with honors and finishing up school and opening my own practice soon!
Something I’d rather not admit: Hallmark movies are the best movies...

It sure has been a wet Monday over here. We’ve had rain all week and will have rain to finish it. I’ve been sitting inside studying and working on a few practice client folders and got a hankering for something cozy, sweet, and delicious. I hopped on the computer and found this #keto cookie recipe from @ketosizeme and went for it. Cinnamon butter cookies?! No turning back now.
You’ll need: 2 cups almond flour, 1/2 cup grass fed salted butter, one pasture raised egg, 1 tsp vanilla extract, 1 tsp ground cinnamon, and 1 tsp liquid Stevia or 1/8 teaspoon Stevia powder. I had Monk fruit extract at home so I went ahead and used that. I used @kerrygoldusa butter and a @vitalfarms egg.
Simply preheat the oven to 300° and add all the ingredients to a mixing bowl and mix. Roll into balls and place on a greased cookie sheet. Place in the oven and bake for five minutes. Remove and press down with a fork. Then return to the oven and cook for 20 more minutes.
That’s it! So simple and delicious and your house will smell amazing after. Now we’re sitting down to a movie, the sound of rain pattering on the roof, and these delicious cookies. What foods are you enjoying this Monday evening?

Saffron is a culinary herb originating from Persia and often used in Middle Eastern cuisine.
Saffron is often used for its mood elevating/ balancing properties, by balancing neurotransmitters dopamine, norepinephrine and serotonin. One study in particular found that it was as effective as antidepressant fluoxetine with less side effects.
Saffron is also also beneficial for eye health. The carotenoids feed the macula 👁.
I love nutritional medicine because you don’t have to pop a pill to have health benefits!
Use saffron in your cooking or simply drink it!
Place 10-20 strands of saffron in a glass of filtered water.Leave covered to soak overnight. Consume in the morning to brighten your day☀️

As I approach the end of my program, something I’m really excited to spend more time on is the creative side of nutrition - cooking! I’ve always loved to cook and experiment in the kitchen, but I feel like the education I’m receiving is inspiring me to try ALL the new foods and ALL the new recipes with ALL the new kitchen toys I can get my hands on. One thing I love about food is that there is so much room to get creative and exploratory with it, and the more I have approached it with a mindset of playfulness and curiosity, the more I have realized healthy eating doesn’t have to be boring or tasteless. In fact, it can be down right fun! And hella yummy. I would even argue that a good home cooked healthy meal simmered on the stove and made with love is far more satiating body and soul than eating out or stopping at the drive through on the way home (although there are times when this is great for many a reason😊).

Well hi there! It’s been many a moon since I’ve posted on this account, and that’s because I’ve been busy busy making changes and chasing dreams. And now, with suddenly only THREE months left of school, I’m ready to start seeing those dreams manifest.
I’ve been in school training to become a Nutritional Therapy Practitioner (NTP for short) for the last 7 months. NTP’s are holistic nutritionists. And while very stressful and rigorous at times, it’s been extremely rewarding and fulfilling. I’ve also gotten to know a tribe of likeminded people along the way, one of the many benefits of enrolling in the program!
While I am just starting up my practice and everything feels crazy new, I wanted to hop on an reintroduce myself and thank you for still being here. I hope to get to know you in the coming months or years, or possibly work with you one on one to help you along in your health journey! But for now, I’ll leave you with a little snippet of what’s to come in the next couple of weeks as I finish up school.

Yes my friends - going deep today with something I've been thinking about lately. Surrounding yourself with people who get you and accept you for who you are is so crucial to our overall wellness. As each year passes I realize that your "people" are they ones who are there for you no matter what, and just love you for being you. You shouldn't have to be anyone other than yourself with your "people." 💚
If you've ever found yourself having to be an altered version of yourself, or holding back what you say because you're afraid what others might think or feel, you are not alone. I have been there many times. I have learned that those are just not my people, and that's okay. Not everyone is for you, and not everyone has to get you. Celebrate who you really are, and embrace the friendships that are easy. We all need our "people." Tell them, call them, hug them and keep them close! 🙏
