Here it is folks, the last of my Memorial Day Menu- Chocolate Drizzled Fruit Skewers! Chocolate covered fruit is one of my favorite things, but when I realized just how much chocolate I was getting from them (a LOT) I tried drizzling it instead. These skewers are a perfect compromise because they have a ton less calories and sugar but still satisfy my sweet tooth. They're also perfect for summer cookouts because they're cool, preportioned, and easy on the beach bod. What's on your Memorial Day menu?

8 2-ounce pineapple wedges
1 small navel orange (8 sections)
8 medium strawberries
1 large banana, sliced into 8 coins
2 ounces chocolate (I used 1 ounce semi-sweet and 1 ounce white)
8 bamboo skewers

Assemble one piece of each fruit on a skewer, and repeat until all 8 are assembled. Chill for a few minutes. Melt chocolate and drizzle over fruit.
Per skewer: 92 calories, 2.6 g fat, 1.4 g saturated fat, 19 g carb, 14 g sugar, 1 g protein, 2 g fiber, 3 mg sodium, 75% DV vit C

I was in the mood for a sweet treat but seeing as I'm going to a wedding in 2 weeks, I didn't want to get too carried away. Ended up with natural yoghurt, a few bits, cinnamon, maple syrup and I just had to add in a dark chocolate biscuit! All in moderation 🍪

I have been working hard lately on replacing refined sugar with healthy snacks. Even though, I am a health coach, I am not perfect. The sleep deprivation from a teething babe has been driving me straight towards sugar and carbs🍪

The hunger hormones ghrelin and leptin get out of whack when you sleep less than 7 or 8 hours. There is also elevated cortisol, which not only makes you crave starchy carbs (sugar) but actually makes them taste better😳

Today, my late afternoon pick me up is a super green smoothie. I made half of the recipe below. Want something warm instead? My bone broth recipe is in the link in my profile. It's perfect for when you are feeling depleted or need something nourishing. I love to drinking with lots of fresh cracked pepper☺️

Chef Carla's Super Green Smoothie
Serves 2
1 tablespoon chia or hemp seeds
1 teaspoon cinnamon
2 cups almond milk
2 small handfuls of frozen kale or spinach (about 2 cups )
1 frozen banana (set aside)
1. Put the ingredients in order listed, starting with the chia seeds, this helps them blend better (do not add the banana yet). 2. Blend everything in a high speed blender, like a vitamix. As soon as the kale and chia seeds are blended add the banana, blend again until smooth.
3. Set aside half the smoothie for snack later. If you added chia seeds, it will thicken slightly. .

Memorial Day Menu- Chicken Burgers! Guys, these are SO good!! And super simple to make. These can easily be the star of your cookout, or you can toss a few on the grill alongside the burgers and hot dogs for a white meat option to offer guests.
1 lb skinless, boneless chicken breast
1 tbsp vegetable oil
1/4 tsp garlic salt
1/8 tsp black pepper
Large dice the chicken and put in a food processor. Grind until roughly the same consistency as ground beef. Scoop out into a mixing bowl and add oil, garlic salt, and pepper. Mix thoroughly and form into 4 patties.
Grill owners- toss these on a grill and cook through (to 165°F internal temperature). Be thankful to be among the lucky grillowners in the world.
To all the grill-less like me, preheat grill pan or oven-safe skillet on stovetop at med-high heat. Also, preheat oven to 350°F. Place patties on the hot grill pan and cook on stovetop for 2-3 minutes on each side, until golden. Then place entire pan in oven and finish cooking (another 12-15 minutes) or until internal temperature reaches 165°F.
