What if I told you this was my office today?! The pull was too strong today, so put the boots on off I went. When I finished I managed to find a quiet spot by the lake where I could set up my 'office'πŸ’‘πŸ˜Š Me + phone + iPad + Logitech keyboard + google asana + dark chocolate n' thermos = perfect mobile office. I've had a super busy day with Austin and as my fellow parents know, it's easy to skip lunch while you're busy with the little ones. Smoothies are easy to make and my new fav includes minimal ingredients yet is packed with nutrition! And gives me a boost of energy that I desperately need mid-day. Who can relate?? I alwayssss keep frozen fruit on hand. Take fresh bananas, peeled and sliced and freeze them for smoothies! Same with blueberries. Check out this smoothie which includes SPINACH!!! Oh and my kids have yet to try it. They are a bit turned off too smoothies at the moment but I'm hopeful they will give them a try! Here has been one of my experimental smoothies which turned out to be AHmazing!
Ingredients:
*1/2 frozen banana
*1/2-3/4 cup unsweetened vanilla almond milk or coconut milk (add the milk at the end until desired consistency is achieved)
*Handful of baby spinach, rinsed and dried
*1/2 cup frozen blueberries
*1 1/2-2 tablespoons finely ground flaxseed
Directions:
Blend everything but the flaxseed and milk, then add flaxseed and slowly add milk until desired consistency is achieved (thick or thinner). Enjoy!

Vegan products were everywhere! I spent the last two days at the Natural Products Expo West in Anaheim and helped out Sue of Sue's Organics salad dressings and spread. Sue is from Humboldt in Northern California where I used to live and her dressings are 100% vegan gluten free and organic. I have never been to a food trade show and this is one of the biggest out there - 80K people attending. Tickets are $1,000 to enter but I was working so got paid to be there. Otherwise I never would have experienced this perspective of the food industry. The industry I have spent much of my life researching as an outsider, was now in person form in a maddening sea of people that went on and on spanning several buildings and multiple levels. This is all the food product businesses, manufacturers (copackers), ingredient suppliers, distributors, packaging makers, marketers, food models, health practitioners, and the press! I'm going to share more details on the Healing With Plants blog later but for now I wanted to share a selection of my favorite vegan food spots. In the middle is golden tea with tumeric and almond milk, a delicious medicinal tea. Sue's Organics salad dressings is bottom right. That garbanzo beans pasta was incredible as was the vegan macaroni. I didn't sample the vegan icecream from Nada Moo because of the crowd there and I was trying to see as much as I could in a short time, but it looked very good. I sampled the dragon fruit smoothie it was incredible. Vegan chocolates, delicious teas, and incredible bean spreads with new flavors in this form. #allvegan #thefutureisvegan

Good morning! I just received these yummy Spirit Animal Crackers by @goodzebra which come in 3 flavors: lemon, vanilla and chai! They contain over 70% organic ingredients and no artificial colors or flavors and no refined sugar. One unique nutritional feature is that these crackers have about 6 grams of protein per 30g serving (which is the size of a typical kids pack) but 7.5g added sugar which I would prefer to be less (that's 15g added sugar for a 2oz pack). But Ethan likes them and Austin has yet to try. Something that annoys me as a dietitian is when people say they are going to give up coffee in an attempt to be healthier. Coffee is actually a very high source of antioxidants in our diet. There is no real reason to cut it out of your diet, unless you are sensitive to the effects of caffeine. So drink up!

Last night's final product: caramelized onion and turmeric pork ramen with @epicbar Beef JalapeΓ±o Sea Salt broth, mushrooms, soft boiled egg (I broke it and started to eat before I took the photo!), roasted sweet potato, fresh jalapeΓ±o and green onion, and a big dose of sambal oelek because I love heat and I'm sick, so my tastebuds are dulled, and I wanted to blast my sinuses some. It was good. Like really, really, holy shit, good. .

Working on getting rid of this cold through ramen: roasting sweet potatoes, caramelized onions in the Crock-Pot and then cooked pork shoulder in it with jalapeΓ±o and beef bone broth, and then removed pork and threw in mushrooms. Waiting on egg and noodles to cook to finish 'er up. .

Kind of a messy picture of my last-minute working dinner yesterday evening. I made a quick Caesar dressing for my kale and threw on a leftover piece of bacon from the day before's breakfast. It was my favorite homemade salad in a while.
Caesar dressing
6 cloves garlic (I used stir-in paste since I didn't have fresh and didn't really measure honestly; this is a guess)
Tbsp Dijon mustard
2 Tbsp Kewpie mayo
Tbsp nutritional yeast
tsp fish sauce (did it to taste; I think it was about a tsp)
Combined all ingredients, then drizzled olive oil until I got the consistency I wanted and finished it with a dash of garlic salt and a squeeze of fresh lemon juice.
Massaged kale for three minutes to soften both leaves and bitterness, tossed it in the dressing, included a tomato about to go bad and that slice of bacon, and voila. .

I have been feeling on the verge of sick, like I almost have a cold or the flu...but not fully, for a few weeks nowβ€”losing my voice, suddenly getting a fever, realizing I've had a low-grade fever for hours, causing my fatigue, and not being able to sleep. And due to other issues, I have not felt much like cooking and taking care of myself. I've been distracted by other things. This week, I've been trying to take care of myself a little more. Monday I was full-on sick so I realized it was time to take it in hand. Veggies, soups, and salads all week. Tonight, spicy Korean beef, turmeric and garlic quinoa, raw lacinato kale, green onions, and kimchi. Organic grass-fed beef and the rest is anti-inflammatory. .
