Remember these coconut matcha energy balls from a few weeks back? I previewed them in my stories and now I'm sharing the recipe with you! These are #raw , #vegan , #gluten-free , slightly sweet and the coconut and matcha really compliment each other. Have a couple for a snack or for a quick breakfast on-the-go. The good fats and fibre from the dates will balance blood sugar and keep you satisfied. Matcha is packed with antioxidants which are great for anti-aging and help prevent cell-breakdown.
COCONUT MATCHA ENERGY BALLS:
💚1 1/4 cup raw cashews
💚1/4 cup dates
💚1 tbsp maple syrup
💚1 tsp matcha powder
💚1 tbsp coconut oil
💚about 2 or 3 tbsp shredded coconut for coating
1. Blend cashews in food processor until ground. 2. Add dates, process until ground. 3. Add rest of the ingredients except shredded coconut and process until the mix comes together (it will start to clump). 4. Roll into teaspoon sized balls and coat in shredded coconut (best done by rolling on a coconut covered plate).
Makes 13 balls. Store in fridge. Enjoy!
