So....I've been working on this recipe since last Thursday.. ๐Ÿ™ˆI wanted a cookie that tasted like a classic chocolate chip cookie; nothing funky or nutty or crumbly. Just chewy, wholesome goodness. After ditching coconut oil and almond butter- I tried this with churned vegan butter & a surprise ingredient. Breakfast this morn was honey raspberry overnight oats using @siggisdairy , topped with figs and coconut flakes from @traderjoes !! I've been seeing so much hype about Siggis that I had to try it out! Also it makes for a cute lil cup hehe.

To make:
-1/2 cup rolled oats
-1/2 container of any flavor (I used raspberry) Siggi's yogurt
-1/4 cup of cashew milk
-1 T of chia seeds
-1 T of honey
-handful of raisins

Mix the above ingredients in a separate bowl, and plop it back into your Siggi's container, which should still have the other half of the yogurt left in it! Then top with sliced figs and coconut flakes. The layer of Siggi's underneath made for a nice fruity base after I finished the oats! #DailySiggis

Second round of Corn thins with peanut butter and banana for the day because it's just that good ๐Ÿ˜๐Ÿ˜ taught abt and grit at sharks and then grit at world Burleigh and now im getting ready for uni 12-7! There are so many misconceptions about 'eating clean.' No, it is not just for weight lossโ€”it is about honoring your body and eating as you are intended: whole, unrefined foods that are minimally processed and free of nasty preservatives and chemicals. Why eat like this? First and foremost, when you eat nutrient-dense foods you will find that you don't need to eat as much AND you will have more energy. Why? You're giving your body what it craves (nutrients!) and giving your digestive system a break. Ever eaten a hamburger and chips only to find that you're still ravenous? You're still hungry because your body is not getting what it needs (companies also literally hire food scientists to put chemicals in food that are designed to make you think you are more hungry than you are). Ever feel exhausted after eating aka find yourself in a food coma? You feel like this because your body is exerting all of its energy to break down the crap you just ate. It takes far less energy to digest and breakdown whole foods as opposed to 'foods' that are heavily processed, fried, and/or sugar-laden.
Then there are those who focus solely on their macros and still eat shit like Quest Bars, Lenny & Larry's 'protein cookies' etc. All calories, carbs, fats, etc are NOT equal. Moreoverโ€”whether you are sensitive or notโ€”things like dairy, wheat, gluten and sugar ARE inflammatory. Most people cannot out train a bad diet. If you're killing it at the gym and not seeing results, this is most likely why. Diet truly accounts for 75%. Don't believe me? Try cutting out sugar, dairy, processed foods and gluten for a week.
I don't believe in diets or eating perfect all of the time. I also don't believe that everyone should look a certain way. That's not what life is about... but I do believe that if you want to truly look and feel your bestโ€”yes that includes weight loss, glowing skin, improved overall health and more energyโ€”then give clean eating a try. #plantbased #whyieatclean

Warm Barley Beet Salad with a Sweet Creamy Tahini Dressing ๐ŸŒฑ
Beets, Kale, Chickpeas, Barley, Lemon, Olive Oil, Water, Tahini, Maple Syrup, Garlic and Sea Salt ๐Ÿด
โ€ข Peel beets and boil in pot until soft. Remove and chop into bite sized pieces.
โ€ข Wash and cut kale into bite sized pieces. Put in frying pan with 1 tbsp olive oil, 2 tbsp water and 1/4 tsp sea salt. Cover and cook until wilted.
โ€ข Soak, rinse and drain 1 can of chickpeas. Add to frying pan once kale is cooked to warm.
โ€ข Cook 1 cup barley in 3 cups water in pot until water absorbed.
โ€ข Combine in bowl and top with Sweet Creamy Tahini Dressing.
โ€ข Sweet Creamy Tahini Dressing - 1 Lemon squeezed, 1/2 cup water, 1/4 cup tahini, 1/2 tsp salt, 2 tbsp maple syrup, 2 cloves garlic. Blend until smooth.
