When you want to try something new for dinner, and you have all the ingredients in your fridge already, you know it’s going to be a good day. I’m excited to try this Sheet Pan Alaska Halibut with Zucchini, Mushrooms, and Tomato from our friends at @alaskaseafood.

4 Alaska halibut fillets (6 oz. each)
6 oz. cherry or grape tomatoes, halved
1 medium zucchini, sliced
8 oz. cremini mushrooms, quartered
3 tbsp. olive oil
1 tbsp. lemon juice
2 tsp. minced garlic
1 tsp. lemon zest
1 tsp. kosher salt
1/8 tsp. ground black pepper .

1. Preheat oven to 400
2. Arrange halibut and veggies on a large baking sheet
3. Whisk together olive oil, lemon juice, garlic, lemon zest, salt, and pepper. Brush over the halibut and drizzle over the veggies. Toss veggies so they are evenly coasted and in a flat layer around the halibut.
3. Bake 14 minutes, or until the halibut is opaque, flakes easily, and is just cooked through. Serve with veggies

CHICKEN CURRY:

It’s taken me ages to get a home made chicken curry right but finally found a way that we both like and it tastes 👌🏻
.
Ingredients:
- chicken fillets (cut into large chunks/mini chicken fillets are handy too) - veg of your choice (I used peppers mushrooms onions) - spices (swipe to see what I use for garlic chilli and ginger) also curry powder, cumin,turmeric,ginger powder,paprika,chilli powder (whatever you fancy) - veg/chicken stock - cornflour (to thicken)
- creme fraiche/coconut milk/natural yoghurt (whichever you prefer- I used creme fraiche the last two times) - rice/homemade chips/cauliflower rice (whatever you like to serve with, I used wholegrain rice and quinoa here) .

Method: (I use a saucepan for it)
- fry off chicken breasts for a few minutes in a choice of spices and some garlic and chilli from the jar then set aside
- blend a combo of all above spices including some diced onion (usually 1/2 tsp-tsp spices and I put about 1-2tbs of curry powder) in a mixer if you have one(makes a nice paste) if not it’s fine to throw them all in the pan
- fry off the curry paste with some onion and garlic and chilli from jar for a few mins then add your veg - add 150-250 mls of stock (depending on how many you’re cooking for I did about 200mls for 2 of us) - add back in your chicken and let everything simmer on low heat for 20-25 mins until chicken is cooked through - at this stage I added in 1tbs of creme fraiche (you can use natural yoghurt or coconut milk) and stir
- add cornflour (1tbs with 3tbs water mixed up) this will thicken, 1tbs was enough for me but thicken as much as you like -let simmer for a couple of mins until thickened to your taste - serve! (With your choice of side) .

I use the 30% fat creme fraiche from lidl and a tablespoon isn’t too high in calories .
