On my bowl - Quinoa topped with #egusisoup served with sautéed carrots and steamed green beans. I wasn’t feeling like meat or root veggies today -so good ole quinoa for the win 😋
Quinoa-pressure cooked(instant pot multigrain) for 8mins , 2cups quinoa, 2cups stock, 2 cups water.
4 large carrots(julienned)
1.5tbsp ghee (may use coconut oil)
1 tsp garam masala
1/2 tsp coriander
Salt to taste
Wee bit of stock to keep it moist ~1 tbsp(optional)
Cook till tender -5-7mins.
Green beans- steamed-no nada added.
But you could add some real butter , salt and blackpepper to yours
Egusi soup -by my mama-she cooks hers differently but we end up with similar results -only mine takes a fraction of the time 😁 - ingredients-Palm fruit Oil, tomatoes, habanero, onions, ground melon seeds(Egusi), spinach, bitter leaf, stock, salt- 😋
