Buddha Bowl by @clemfoodie πŸ’š

Recipe
Roasted cauliflower :
- 1 cup raw cauliflower florets
- 1 tsp turmeric
- 1 tsp olive oil
- salt & pepper
Sweet potato wedges:
- 1 small/medium sweet potato
- 1 tsp paprika
- 1 tsp dry thyme
Salad :
- 1 bunch of kale
- 1 tsp olive oil
- 1 tbsp lemon juice
- 1 tsp apple cider vinegar
- 1 large pink radish
- 1/2 avocado
- 1 tsp black sesame seeds
Beet hummus :
- 1/4 cup canned chickpeas
- 1/2 cup beet sauerkraut
- 1 garlic clove
- 1 tbsp tahini
- 1 tsp cumin seeds
- salt & pepper
Directions :
1. Preheat oven to 375Β°F. Line a baking sheet with parchment paper.
2. Place cauliflower florets on the baking sheet, drizzle with olive oil and sprinkle turmeric, salt and pepper on top.Β 
3. Wash and peel sweet potato and cut into wedges. Sprinkle with paprika, thyme, salt and pepper and place on baking sheet.
4. Bake in oven for about 45 minutes.
5. Wash kale. Place in a mixing bowl with olive oil, lemon juice and apple cider vinegar and massage for a few minutes. Let sit for at least 15 minutes to soften kale.
6. Place all beet hummus into a food processor and process until smooth (add more lemon juice or water if needed).
7. Assemble your bowl by adding massaged kale, radish cut into slices, the avocado, cauliflower and sweet potato wedges. Add a dollop of beet hummus and sprinkle with sesame seeds. Enjoy! #letscookvegan

Peanut butter jelly oats 😍 I think this could possibly win the title of my favourite porridge topping! I cooked some oats in @alpro coconut milk with half a mashed banana and then topped it with some strawbs, extra banana slices, frozen raspberry jewels, @meridianfoods peanut butter and a spoonful of raspberry jam! Some serious brain food right there to keep me fuelled for a busy day at work ✨ Who else is starting their week with a nutritious breakfast?!

Sometimes, you do miss a Monday. And it's okay! πŸ™ƒπŸ’• // Well, I got in enough LISS (about 10km between work & walking the dog) πŸšΆπŸ»β€β™€οΈ & I'd planned to start the week off right with Legs Week 9. πŸ‘ŠπŸΌ But it just wasn't going to happen - it was one of those days where everything works against you! πŸ™…πŸ»πŸš« I haven't been drinking enough water (my bad! πŸ˜³πŸ’§) so I'm dehydrated & feel crappy. πŸ€’ Then I was playing with my dog, he head butted me & I split my lip open! πŸ˜‚ So that was a painful (& messy, I won't lie) little event! πŸ’‰ This photo was pre-puffy/bloody lip hahah. You're welcome. 🀣😜 So anyway, the point of this story isn't to whinge (because none of us are immune to days like this). πŸ™‹πŸ½ But it's to show that not everything goes exactly to plan, & sometimes you've got to be flexible & say, "okay, so lets readjust & reassess. About this time 3 years ago this is where I was (aka heaven). I'd just finished my degree and decided to take myself on a beautiful holiday to Bali before undertaking the full time work search.
