Lompe baking today at @thenorwegianbakery !A quint essential Norwegian thing! You make the dough mainly from mashed potatoes (here a mix of sweet and regular potatoes) flour and salt. Cook on a griddle or a hot plate for a few minutes and voila! It might work on a pizza stone or even a frying pan too.
Like crepe you can go sweet or savoury. Whatever you got in the fridge! Leftovers are great!
Here I got a rather posh savoury version with hummus, pesto, olives, vegetables, lettuce and truffle oil!
