I was at Marks & Spencer last week and there was a pint of pineapple & mango on sale, so I decided to make tropical salsa to go with the salmon fillets that were already in my shopping basket. It’s that random, no planning whatsoever.
This tropical salsa is so refreshing & appetising. I would love to add a bit of finely julienned red chilli padi to it, but I have to refrain from eating anything spicy.
This is a really quick & easy one-bowl dinner. No need for any recipe really. Once the salmon fillets were cooked to my desired doneness, I served them over hot steamed rice & piled on the salsa. Voila! A well-balance dinner is ready in 30 minutes.
