Ingredients -180g spaghetti
Scotch bonnet peppers(1- as many as you like),1 red bell pepper. You can ignore the red bell pepper if you like it very spicy, the red bell pepper is for those who can only use one or two scotch bonnet peppers. I used about 15 scotch bonnet peppers as I like it very spicy.
Salt, two medium sized onions, seasoning cube, curry, thyme, white pepper, a tablespoon butter, blended crayfish, parsley or scent leave(Fresh is best but you can always use dried- I used fresh parsley for the previous one but dried for this as I didn't have fresh parsley at home.
Method- Wash & coarsely blend the peppers & one onion. Slice the other onion into rings and set aside. Chop parsley if using fresh ones and blend crayfish until smooth. Boil about three cups of water in a medium sized pot. Once boiled, add a few drops of vegetable oil and add spaghetti- I didn't break mine. Boil for a few minutes until almost done but still firm(be careful not to overboil it especially if you're using spaghettini). Drain, rinse(to avoid clumping) & set aside.
In a pan or skillet, heat up a cooking spoon of vegetbale oil, add the chopped onion rings and fry until fragrant. Add the coarsely blended peppers & fry for a few minutes until it looses moisture. Add curry, thyme, white pepper, seasoning cube and salt to taste. Stir and add the blended crayfish. Fry for about a minute and add a cooking spoon of water on low heat
Rinse the spaghetti again and drain properly. Add the spaghetti to the pepper sauce in the skillet or a pot, Stir properly, taste for seasoning and adjust if need be. Add the tablespoon of butter, the chopped parsley or scent leaves & stir properly. Take off heat. If spaghetti isn't as soft as you'd like, Cover the pot tightly with a foil & leave to steam cook for a few minutes.
