Plan ahead for all of that Turkey with this helpful Leftover Turkey Chowder
• 4 Tablespoons butter (55g)
• 1 large onion
• 3 large cloves garlic
• 6 Tbsp all-purpose flour (50g)
• 4 cups chicken stock
• 3 cups white potatoes diced smaller than 1/2 inch (465g)
• 1 cup sliced carrots about 1 large carrot (115g)
• 3 cups cooked, shredded turkey (375g)
• 2 1/2 cups frozen sweet corn (350g)
• 1 1/2 cups heavy cream (355ml)
• 4 oz canned mild or medium chili peppers (113g)
• 1 teaspoon smoked paprika
• 1/2 teaspoon poultry seasoning

1. In a large, heavy-bottomed pot (preferably a cast iron dutch oven), melt butter over medium-high heat.
2. Add onion and cook until soft, about 5 minutes.
3. Add garlic and cook, stirring frequently, until fragrant (about 30 seconds).
4. Sprinkle the contents of the pot with the flour and stir until smooth, about 1 minute.
5. Add chicken stock, potatoes, and carrots, and bring to a boil, scraping the bottom of the pan.
6. Add remaining ingredients, return to boil and cook for 5 minutes, stirring occasionally.
7. Reduce heat and simmer 30 minutes.
8. Serve.

If only I could fit in everything that’s happened in the last 3 weeks this is just a little snapshot. It’s been a mash up of living with the luck of Mr. Griswold and multiple Seinfeld episodes. We’ve all been sick in our house continually passing it back and forth. We’ve had both vehicles have issues a day apart, one in which I was driving on the highway with the kiddos. We’ve had a sudden death in the family. We’ve had a broken furnace. We’ve had unforeseen financial things come up. We’ve cancelled almost all plans. Most of this happening over my bday weekend. I’ve peed my pants numerous times. @always_brand has been my best friend through all the coughing. I’ve been surprisingly treated to a free lunch only to come out to my car a few minutes late to see a parking ticket on my dash. We’ve had puking and laundry galore. My house is a disaster. I’ve had to call in sick for work which I absolutely HATE. Being self employed there’s no such things as paid sick days either. The only thing any of us have yet to experience in all this is Diarrhea. Thankfully! I’m not looking for anyone to take pity on me, I’m just reminding ya’ll that past all the scrolling and envying we do on here that this is what life sometimes really looks like. I’ve had to try and laugh for the last few weeks so I’m not continually crying. I’m waiting for the moment where I can say YES! This IS the most wonderful time of the year. It’s coming.... Soup's on for this cozy  and rustic Fennel and Carrot Soup 🥕🥕🥕 Ingredients
•  1 tablespoon butter
•  1/2 teaspoon fennel seed
•  1-1/2 pounds carrots, sliced
•  1 medium sweet potato, peeled and cubed
•  1 medium apple, peeled and cubed
•  3 cans (14-1/2 ounces each) vegetable broth
•  2 tablespoons uncooked long grain rice
•  1 bay leaf
•  1/4 teaspoon curry powder
•  1 tablespoon lemon juice
•  1 teaspoon salt
•  1/4 teaspoon white pepper
•  2 tablespoons minced fresh parsley

•  In a large saucepan, melt butter over medium-high heat. Add fennel; cook and stir 2-3 minutes or until lightly toasted. Add carrots, sweet potato and apple; cook and stir 5 minutes longer.
•  Stir in broth, rice, bay leaf and curry powder; bring to a boil. Reduce heat; simmer, covered, 30 minutes or until vegetables and rice are soft.
•  Remove from heat; cool slightly. Discard bay leaf. Process in batches in a blender until smooth; return to pan. Stir in lemon juice, salt and pepper. Cook over medium heat 5 minutes or until heated through, stirring occasionally. Sprinkle with parsley.
