What do you do when you're potty training and trying to kill time while on laser alert for accidents?! You make muffins with your toddler!! These my friends are HEAVEN! AND they don't count as a carb?!?!? All the praise hands!
Banana apple muffins
2 large eggs, lightly beaten
1 cup mashed ripe bananas (about two medium)
1 tbsp organic grass-fed butter, melted
1 1/2 cups almond flour (make your own by pulsing 1 cup almonds in the food processor)
3/4tsp baking soda
1 dash salt
1/2 cup chopped apple (about 3/4 medium)
Preheat oven to 350
Line nine cups in muffin tin of coat with spray
Combine eggs, banana, and butter and mix well. Set aside.
Combine almond flour, baking soda, and salt and mix well.
Add almond meal mixture to egg mixture and blend well.
Add apple and mix until just blended.
Divide batter amongst nine muffin cups.
Bake 16-18 minutes or until golden brown and toothpick comes out clean. Cool.
