Pépins 2015 (5% alc.) This cider is made from equal parts apple, pear & quince. The fruit comes from a number of diferent plots grown where the soils are either molasse over schist or gravel mixed with clay soil. The fruit was foraged from untreated trees that yield very little fruit.
Grüner Veltliner Kamptal DAC 16 (12.5% alc.)
60% added yeast, 40% spontaneous in stainless steel. The Grüner grapes come from 3 diferent vineyards - Neuberg, Spiegel and Thal, sites rich in loess soils. Whole bunch pressed. 40% of the grapes were spontaneously fermented in stainless steel, and 60% fermented with added yeast. The wine spent 6-8 weeks on the lees.
