YALL. I baked something that actually tastes good!! And not just good, like reeeeeal good 😋I'm not much of a baker at all, but I got the hankering for some muffins yesterday so I did what any millennial would do and headed to Google. After researching baking proportions (turns out there's a big difference between 1/2 tsp baking soda and 1 tsp baking soda 😳) I came up with the recipe for these Grain-Free/GF/Naturally sweetened Blackberry Dark Chocolate Chip muffins! They taste even better than the Betty Crocker boxed muffins of my childhood (and contain no junky ingredients or extra sugar). DO IT 👇🏼

Preheat oven to 350. Mix all of the below ingredients together and pour into 12 muffin tins and bake for about 17 minutes.
1 cup cashew butter (or any nut butter)
1 cup almond flour
3 eggs
1/2 cup organic maple syrup
1/3 cup melted coconut oil
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4teaspoon sea salt
1/4 tsp vanilla extract
1/2 cup fresh blackberries (or any berry)
1/2 cup chopped @theochocolate 85% dark chocolate

Not a single marshmallow was melted in the making of these crispy squares, and no sticky syrups in sight either🙊 Can’t wait to share very sooooooon!!

The holiday was great, crazy weather but whether the weather was welcoming or whether the weather was wet and windy, we weathered the weather well. We wore our waterproofs when needed and our wetsuits when in water.

Back to the picture. I baked two cocoa-sourdough fruit breads on Friday night, one as a gift to say thanks (although it came out the oven 'Hank'😂). The other was for us on the way back. A lot of it got consumed an hour out of the oven though 😋.

I've fired up the old starter from the fridge and I'll be baking at home again by Monday hopefully. Yeast bread is already coming though... littlen's suggestion 😂

What do you put in your tummy and why?

Roughly 130g of protein because I want to maintain the muscle I have and continue to build muscle.
.
40-60g of fat but let's be honest sometimes I consumed much MUCH more fat because it's in some of my favorite foods like desserts, pizzas, and epic burgers. I used to eat very little fat. Like sub 20g because I didn't understand its role in shuttling nutrients. Even though I don't prefer to eat a ton of fat on a regular basis, I aim to make it apart of my daily intake because it keeps my body healthy and hormones balanced.

Carbs. Sometimes 100g of carbs when I'm not training. Sometimes upwards of 250g of carbs. But typically somewhere between 150-200g though because that's an amount that allows me to hit my protein and eat an adequate amount of fat each and everyday.
.
1700 calories per day can create a reasonable deficit without very much additional activity for my body composition and metabolic rate however I've found this amount can leave me feeling shitty rather quickly.
.
On the other end of the spectrum, eating 2500 calories per day not only leaves me pretty full 24/7 but it also causes me to feel sluggish.
.
I don't set specific macros or caloric goals for myself like I did when I first got into tracking.
.
Instead, I opt to hit between 1800-2000 calories based on my training and how my body feels. .
This sense of intuition didn't come after 12 weeks of tracking. It came after many MANY years of fucking up, overeating, feeling the need to undereat, overcompensating with exercise, overtraining, trying keto, trying no fat, reverse dieting, fasting, and ofcourse full blown fuck it mode.

Don't expect to have a firm grip on it all your first month tracking. It takes time but I promise it will come.
