There's always a first time for everything and for me it's eating 'nama sujiko' (salmon roe sacs)

Not to be confused with Ikura, Sujiko is essentially salmon roe that is still intact inside its sack. When sushi chefs start serving these delicacies, it's a sure sign that fall is here 🍃🍂. Nama sujiko isn't usually very good to eat on its own but with a little work done and some miso marinating the taste changes completely from an overpowering fishy taste to a rich and sweet flavour. This is a new autumn favourite for me 😍 .
