Tonight’s dinner was one for the books. Baked curry chicken thighs, sautéed broccoli, yummy salad and low-carb naan bread! I’m going to remember this chicken recipe for the future, so easy and delicious.
Heavily spice chicken with: curry, turmeric, garlic powder, onion powder and salt and paper. Place in a cast iron skillet skin side up. Make sure the cast iron is well seasoned/oiled then throw in a few small cubes of butter for good measure. 🤣 Bake at 375 for 30-40 mins until internal temp reaches 165. Pull out and rest for 10 minutes.
