- flour 20 oz.
- 0,3 oz quick rising yeast.
- 1 1/2 cup water. - 1 tbsp salt.
- 1 tbsp @origin846 extra virgin olive oil (+more to top the focaccia).
- 8 small gold potatoes.
In a large bowl combine flour, water, yeast, salt and olive oil and make a dough. Add more water or flour if needed. Cover and put in a warm dry place for an hour for the dough to double in size. Meanwhile thinly slice the potatoes and cook in salted boiling water for 5 minutes. Drain and set aside.
Sprinkle the baking tray with olive oil and spread the dough on top of it. Sprinkle the dough with olive oil, then top with potatoes, salt and rosemary.
