So here is the doughnut recipe I used yesterday, it was from @bakerbettie so check out her feed, she very kindly said I could repost it, she also has loads more amazing recipes! 💕😍
I used the cup method of measuring because it’s nice and easy if you have a cup measure.
Recipe is
70g salted butter, softened
100g caster sugar (1/2 cup)
1 egg
100ml (1/2 cup) milk
180g (1 1/2 cups) gluten free self raising flour
1/2 tsp baking powder
1/2 tsp vanilla essence
Topping
60g butter, melted
50g sugar
Generous sprinkling cinnamon, depending on taste, I like lots!

Method

1. So for the doughnuts you need a mini doughnut pan or you could use a mini muffin tin to make doughnut holes? (Are they a thing? 😂) grease the tin with a pastry brush either with melted butter or grapeseed oil.
2. Preheat oven to 180c
3. I then put everything in my blender and whizzed it up till it was a smooth batter or follow @bakerbettie ‘s method
4. Fill a piping bag, pipe a small amount in the pan, so just half way up as you don’t want to lose the hole in the middle.
5. Bake for about 8 mins or until golden brown.
6. Leave to cool in pan for 5 mins then lift out carefully, loosening off around the edge as you go.
7. Brush with melted butter and sprinkle with the cinnamon sugar or you could ice or dip in chocolate!

En ja, we blijven nog even in het zoetige! Qua foto dan; nu in 'real life' heb ik juist het hartige accent te pakken, met 2 supergave masterclasses! Indische rijsttafel met @chefdannyjansen bij @homemadeheidy en Italiaans met Franz Conde. Uiteraard zal ik verslag uitbrengen van deze supertoffe workshops, dus blijf mijn feed en story in de gaten houden! En misschien op zondag dan toch een zoet dessertje, maar daarover later meer. Bring an Italian classic to your home with @origin846. This focaccia with potatoes and rosemary was made with top quality @origin846 extra virgin olive oil which is a key factor when cooking Italian food. Nothing beats the smell of freshly baked bread, right?
Ingredients:
- flour 20 oz.
- 0,3 oz quick rising yeast.
- 1 1/2 cup water. - 1 tbsp salt.
- 1 tbsp @origin846 extra virgin olive oil (+more to top the focaccia).
- 8 small gold potatoes.
- rosemary.
- salt.
In a large bowl combine flour, water, yeast, salt and olive oil and make a dough. Add more water or flour if needed. Cover and put in a warm dry place for an hour for the dough to double in size. Meanwhile thinly slice the potatoes and cook in salted boiling water for 5 minutes. Drain and set aside.
Sprinkle the baking tray with olive oil and spread the dough on top of it. Sprinkle the dough with olive oil, then top with potatoes, salt and rosemary. Sprinkle with more olive oil and leave the dough to rise for another hour. Bake at 385°F for 40 minutes. Top with extra olive oil before serving. Enjoy! #ad #extravirginoliveoil #origin846

What to do with those leftover pumpkin seeds? Don’t waste them! Make pumpkin spice granola! 🎃 #pumpkinseeds

Roasted pumpkin seeds
Preheat oven to 250° and line a baking sheet with foil.
Scoop out your pumpkin seeds (should yield about 1-2 cups) and place in a bowl.
Transfer seeds to a colander and rinse under cold water to get all the stringy stuff off the seeds. Transfer clean seeds to some parchment paper and allow to dry for up to an hour.
Toss dry seeds in 2 tbsp olive oil, 1 tsp pumpkin pie spice and 1/2 tsp salt. Spread the seeds on a baking sheet and allow to bake (tossing occasionally) for 45 mins. Allow to cool before eating and store them in an airtight container.

I've never been to Scotland before. We're on our way to Edinborough now which is exciting! There's a tight schedule to keep as it's the best part of a day's drive, but a pub lunch on the way was a cheeky bonus, a good cheese toastie is hard to beat!
